Where did the nickname Mrs. LC come from?
In college one of my closest friends nicknamed me LC (first name, middle name initials), and the nickname stuck with her and a lot of our other close friends. I also wanted to incorporate my new married life, which is such a big part of my life right now, hence the “Mrs”.
What do you do?
I’m an event planner and work in development/ fundraising with a private non-profit. And I’m rediscovering my passion for music.
Why did you start blogging?
I had been reading a few blogs and enjoyed seeing their kitchen creations and reading stories from their lives. I also came into plenty of free time and a desire to keep track of all the recipes I made.
Why don’t you blog every meal?
I have thought about it, but haven’t yet because that’s not the reason I started a food blog. I may switch things up in the future, we’ll see!
What are your usual daily eats/ drinks that you don’t blog?
I drink a lot of water (I recommend carrying a large water bottle with you throughout your day, as I’ve found it the easiest way to keep track of how much you’re drinking). I also like cold unsweetened teas, and hot tea. I’ve gotten to the point where I rarely sweeten teas, but if I do, it’s with part a package of Stevia (I picked up the Truvia packets a while back).
Daily eats include anything and everything. Breakfasts are usually cold cereal or oatmeal. Lunches are primarily based on veggies/ fruits I have on hand (and leftovers). So chances are, if you saw my previous dinner post, I’ll be using the leftovers/ same ingredients in my lunches. Snacks include fruits, veggies, and one of my favorites: Z-bars! (I love the chocolate brownie flavor!)
What’s your nutritional kryptonite?
Chocolate! Really it’s just sweets in general. I am someone who gets much more tempted by going out for ice cream or making a batch of cookies, than I am to be tempted by salty or fried food, or alcohol. I do try to keep things in check, and enjoy in moderation though! There’s absolutely no reason to be able to indulge in any kind of food you desire, as long as you do it in moderation!
I’ve read you’re allergic to tree nuts, does that include all nuts?
I’m just allergic to tree nuts, which include walnuts, pecans, pistachios, hazelnuts, macadamia nuts, brazil nuts, chestnuts, etc. Basically there are only three kinds of “nuts” I eat. I can have peanuts because they’re grown underground; almonds because they’re actually a pit; and cashews because they’re actually from the cashew fruit. And no, I don’t feel bad about not being able to eat tree nuts – I’ve never been able to, and I’m just thankful I can have almonds, cashews, and peanuts!
What are your main forms of exercise?
Running is something I’ve recently picked up. I ran my first 5k in December 2008, and have since continued running. I enjoy being active and doing “fun cardio” (rollerblading, post-dinner walks with the hubs, etc.). I do some strength training in my own home with equipment I currently have (can’t afford a gym membership right now!).
Where do you find the special flours you use, like spelt flour and whole wheat pastry flour?
I have purchased these in the bulk section of my closest Whole Foods. I know there are many other health food stores out there, so check out your local stores!
Do you buy flax seed already ground or grind it yourself?
I grind my own golden flax seed in a coffee grinder. The flax seed does need to be ground in order for your body to absorb its nutrients. Ground flax seed has more nutrients when it’s ground fresh and you use it right away, rather than if you buy packaged ground flax seed and it’s been sitting on a shelf for ages.
Where do you get your coupons?
I get the most coupons from Sunday papers (see this post for a model of how I do it). My favorite website for printing coupons that I’ve seen so far is www.coupons.com.
When and where did you get married?
July 26, 2008 in Sarasota, FL. (We had our ceremony in a beautiful chapel I grew up in and the reception at a gorgeous country club).
How in the world did you spend under $5,000 on your wedding budget??
Yes, it is possible! My biggest piece of advice is to do your research! Don’t jump on the first “dream” option you see, but don’t settle. It takes a ton of hard work, but if you’re on a tight budget, don’t be afraid you won’t be able to have a beautiful day. Contact me if you’re a bride and you want some more information!
What is the nutrition course you are currently taking?
I’m pursuing my certification to be a Nutrion & Wellness Consultant through the American Fitness Professionals & Associates. By taking this course you are still not a L.D. or a R.D. If you’re interested in becoming an R.D. you’re more than likely going to need to go back to school. The AFPA course is a great way to gain a greater knowledge of nutrition, though!
