Yesterday’s Eats

To me successful days are largely defined by positivity and productivity. Based on that, yesterday was a successful day. :) Among the plethora of things I crossed off my to do list, I was even able to watch a movie while I ate lunch and perused several job sites! I had a promo code for a free redbox movie rental, so I rented Sisterhood of the Traveling Pants 2. Definitely a movie that would have been very hard to get the husband to watch with me, so I figured it’d be a good background movie to watch while I worked on some other things. :)

Lunch was very orange!
2 clementines, 4 small squares of tofu (sauteed with a bit of Italian seasoning, kosher salt, and evoo), and a nuked sweet potato I mashed up with my fork. Yum yum!

I also polished off the last half of this iced tea I had purchased with my Whole Foods gift card. Tazo Plum Pomegranate Green Tea. LOVE this stuff! I really hope they sell this in tea bags so I can make my own!
I don’t have pictures from dinner last night because I was in a rush to eat since I was so hungry post-work out! But we had some leftover chicken cordon bleu my mom sent home with me, along with a spinach/ broccoli slaw salad, and some garlic toast I made.

I capped my night off with an easy 2.5 mile post-dinner walk with Ross, the rest of the laundry, and perusing some graduate programs I’ve been thinking about.

I have some blog plans for later this week! I’ll be featuring more original recipes, including a recipe for Apricot Almond Granola (my breakfast this morning), and I’ll also be featuring a long post with tips for frugal living! Have a great Tuesday!

    Freebies! How fun! I just made my bf try Puffins and he wasn’t a fan. Oh well, more for me!

    Thanks Linds!! I just ordered both :D That sweet potato looks fab, I just made my own hummus yesterday- I posted about it, OMG it is so easy and good…I’m never spending major $$ on hummus again, love it!

    I also got Sisterhood of the Traveling Pants 2 while my husband wasn’t home to watch as background while I was doing laundry and cleaning : ) ha, and agree, it would have been a hard one to get with him.

    You continue to amaze me. I love the recipes and am inspired even though I’ve cooked “NOTHING” in the past month (hardly). DH is leaving this week, so I’ll have to step up to the plate.
