Weekend Recap

I think I need more creative post titles. Oh well, another day. :)

Yesterday ended up being pretty fun! My friend Tressie graduated from a nearby college, so we met up with her, her husband and family for a celebratory lunch at Olive Garden. It was so good to see them! As soon as her semester ended they moved to Alabama, and I’ve missed her a lot! She and I have known each other since middle school! We were drum majors together in high school and were in each other’s weddings. :)

I just did the soup and salad combo for lunch. I love their salads, so I had about 2.5 small plates of salad. The soup was the Chicken and Gnocchi soup….umm don’t get this. It’s my own fault, I didn’t really read the description of the soup. Yuck, the soup itself was like pure cream sauce. I didn’t eat it. More room for salad! And I had 1.5 breadsticks…that last .5 was from a basket of fresh, hot from the oven breadsticks, who can say no to that??

Afterwards we went to Lakeland to Target!!! Probably one of my favorite stores ever! :) Ross got a giftcard for his return, so we had fun!! I got 2 of the Champion C9 sports bras. One was a hot pink one on sale for $15, and the other was a yellow one I found on clearance for $4.24!! Sweet! I also got a pair of super comfy men’s sweatpants for $5 and hit the motherload in the $1 bin’s scrapbook section!! Here’s a pic of my scrapbooking loot and a Mojo bar. :)

Last night we enjoyed some chocolate covered strawberries as a yummy dessert (between the two of us we ate about half the strawberries pictured below). Strawberry season is coming into full force here in FL, hooray! We have plans to go strawberry picking sometime in the next couple of months, maybe for Ross’ birthday. :)

My trick for making the strawberries a little “healthier” is I melt 2 oz. of bittersweet/ unsweetened chocolate with 2 oz. regular semi-sweet chocolate chips. It makes the chocolate taste richer and obviously there’s half the sugar! [Sentimental side note: the large sea shell platter the strawberries are on was from the plate of chocolate covered strawberries and champagne the hubs arranged to have waiting in our suite on our wedding night...aw I love him!!!]

Anyway, today was rather uneventful. If you haven’t yet, don’t forget to go pick up your Sunday newspaper for coupons! I did, and while the actual supply of coupons was lower than usual, I did find in the Target flyer a coupon for a $10 Target gift card with a new or transferred prescription. I actually have a doctor’s appointment tomorrow morning where I’m going to get a prescription switched, so perfect timing!

We went grocery shopping this afternoon and practiced good character skills! I tend to scan my receipts before I leave the parking lot, and we found that we never got charged for a package of blackberries. Ross went back into the store to tell the chick at the customer service desk, and apparently she was all confused. I kinda thought that they’d end up giving them to us to thank us for our honesty, but I guess good deeds don’t get rewarded! It’s ok, it was just $1.29, and honestly, I would MUCH rather be honest than (in my eyes) steal.

Dinner tonight was Mexican themed. Both bowls had spanish rice, black beans, a dollop of salsa, and celery sticks. One bowl also had chicken and cheese. I only ate a couple bites of my tortilla and gave the rest to my side kick. ;) [hehe, we'll see if he really does read the blog!]. Guess who had which bowl!?

Ok, well that about wraps it up! Off to go finish watching The Visitor – so far it’s a really good movie! And I think some Publix Moose Tracks frozen yogurt may be on the agenda later. It was our grocery splurge. :) Have a relaxed night everyone, and hope you have a great Monday tomorrow!

Anyone have anything fun or exciting to look forward to this week?

Aw, Tressie! I hope she’s doing well :)

I went to Target to look at the bras but didn’t see any for $4.24! That’s so amazing! I didn’t end up getting one, but I’m glad you found such a great deal!

I LOVE Publix Moose Tracks Fro-yo! It’s such a yummy alternative to its ice cream counterpart! Oh and last thing, I bought those blackberries for $1.29 today too! I can’t wait to dig into them :)

    Have a great Sunday evening!

I’m very excited about the wonderful fresh strawberries, I picked some up today. And have you seen the super cheap blackberries lately?!?! I haven’t been strawberry picking since I was little, but would love to go this year, sounds like fun.

Oh and if you want Caitlian and I are volunteering at the Disney Princess Half on March 8th. We signed up for the Epcot leg of the race. Let me know if you want to volunteer. The only thing is you have to be there at like 6am. :) BUT you do earn a free Disney ticket, just think of it as an investment.

I love Olive Garden! And I always get the soup and salad, too…I really like the minestrone. Oh, I could go for a basket of hot and fresh breadsticks right now! Did you know that Olive Garden and Red Lobster just put the nutrition facts for their WHOLE menus up online? I checked them out this morning.

    Chocolate covered strawberries…yum-o! :o )
