Superstar Breakfast Combo!

Happy Monday! I typically like Mondays just as much as the next person, but today I’m trying to start the week with a more positive outlook. I am SO thankful to have a job! And as insane as this week will be (annual gala is on Saturday), I’m glad I am able to work hard, love a challenge, and enjoy being busy!

Breakfast was a blogger-superstar combo. :)

Half a breakfast cookie ala Gina!


(I used 1/2 c. oats, 1/2 mashed banana, splash soymilk, 1/2 scoop chocolate soy protein powder, a couple chopped up strawberries, 1 TBS. dark chocolate dreams peanut butter, dash of cinnamon, sprinkle of stevia). So good! And one of my favorite flavor combos ever!

Half (or a small) green smoothie! (Hubs and I split this breakfast items today).


(I used a mushy banana, frozen mango, a couple small handfuls of ice, a splash of OJ, and a ton of kale!). It was my first time using kale in a smoothie and I made sure to have a very strong, sweet fruit-based smoothie. The kale was fine! I was scared it was going to be super bitter, but no! Question though: if anyone else has made spinach and kale based smoothies, did you notice the kale was “chunkier” leaving more super tiny pieces to chew? Maybe my blender doesn’t like it’s almost-daily use, or maybe it’s not thankful to have a job this Monday morning! ;)

    I have used both kale and spinach but haven’t noticed what you’re talking about? I do think kale gives it a stronger taste than spinach though. LOVE the breakfast combo!!

    Ok, so I made the Green Giant smoothie this morning and I’m thinking, um, maybe I need to find a smoothie made with berries or something! LOL Seriously, I almost gagged! And it didn’t taste horrible, but I think it was the color that got me. And Jack was sitting there getting tickled at me, saying “I’m gonna stay here until I see you drink this!” It was so funny! We had a good laugh. But I think maybe a berry smoothie, something a little purple-y in color might work better for me! Ya got a smoothie recipe for one of those?? LOL

    i’ve never even had kale, less alone in a smoothie! what does it taste like?

    i’m always afraid to try a green smoothie (although they look sooo cool) cause i don’t want to feel like i’m drinking vegetables.. :)

    Erica – haha your comment made me laugh. I actually love the bright green color!! (I’m a green fan). I may just try a berry themed smoothie tomorrow morning though, just for you. ;)

    Pearl – kale is definitely more bitter and heartier than spinach. Try a green smoothie! It’s green in color, but if you put a banana, or a banana/ milk/ or other fruit combo in with it, you’ll barely notice the “green” (esp. if you start with spinach).

    Miss Marie – combine all of the ingredients listed (I just stirred them all up with a rubber spatula), flatten it all out on a large dinner plate and leave it in the fridge overnight. If it’s too soft for you in the morning, stick it in the freezer for 10-20 minutes. SO GOOD!!!
