Happy Sunday!
Yesterday was a busy day! Basically we were out of town for the whole day for miscellaneous activities and shopping, and the only picture I have to show for it is this picture from the bridal shower of the bride-to-be and myself.
Random note: You can’t really tell here, but my hair has gotten so long! (The only way you can tell in this picture is by how stringy/ thing my hair looks from the weight of it all). My sister Megan and I have decided to cut out hair/ donate to locks of love on the weekend she turns 20 – May 18-19.
We picked up a few things at Whole Foods and World Market that I’m sure you’ll be seeing appearances of throughout the week. Although one thing that I went to Whole Foods for (bulk whole grain spelt flour) they didn’t have any! Bummer!
Remember that announcement I had in store for this weekend? Well, Friday was the first day of spring and I took that opportunity to not only do some spring cleaning/ organizing of my home and belongings, but to also look at myself and see if there is any personal spring cleaning I need to do. I have decided that for at least 2-3 weeks I will be posting every meal and snack I eat throughout the day, as well as my workouts/ any physical activity. I have found that my schedule has been all over the place lately, leaving me with less than stellar workout and eating habits. I’m hoping that blogging everything will keep me more accountable and get me back on track quickly.
So, to kick this off, I’ll share this morning’s breakfast!!
Breakfast was later than usual, because we slept a little later since our schedules have been so crazy lately.
I prepared pancakes according to the Hodgson Mill Whole Wheat Insta-Bake Mix box. I added a diced gala apple and 1 teaspoon ground cinnamon. Voila!

I made some smaller pancakes and we have a ton leftover (hello freezer!) for quick morning leftovers. Above are the thee I had with maple syrup for dipping and a small juice glass of OJ (just for reference, that is a salad plate, not a dinner plate).
Now I am OFF! I need to hit up the grocery store for a few more produce staples for the week.
