Lindsey’s First Day of School!

Hey everyone! I meant to post last night except I completely passed out asleep! I didn’t even realize how tired I was! I’ll recap yesterday’s lunch (salad) and dinner (a new recipe trial).

Wednesday Lunch: Odwalla bar and salad with spinach, plain tofu, dried apples, cucumber slices, and avocado. This salad was fabulous! Such a great combination of flavors and textures. And it was so voluminous it took me ages to eat while I was working away!


For last night’s dinner we used up some random leftovers/ produce, made a little cornbread, and tried out Veganomicon’s Roasted Portobellos. I was honestly not a fan of this recipe. Ross like it fine, but between the balsamic vinegar, soy sauce, and wine I felt the portobellos had a strong acidic taste to them.


On to today! Today was Lindsey’s first day of school! Teaching at a school that is. :) Today was the first day I taught music to all classees in a preschool through fifth grade ESE school. And wow. The upper rooms were no problem teaching wise and music wise. Everything there went how I expected, because I’ve taught students ages five and up before. The diaper room? No bueno. The kids don’t sing along, clap along, dance along, color along, nothing! I felt like a trick pony in a one-ring circus. Not to mention Miss Lindsey left with her ponytail yanked along with her eyes and ears clawed by tiny fingers. Yay for fun times! :)

The best moment? When I was leaving one of the upper rooms, a child approaches me with this huge grin on his face, then proceeds to say (excuse my language, this is a direct quote), “thank you bitch!”. As I had been warned about his verbal tendencies beforehand, I could not help but laugh out loud.

I don’t have any pictures of breakfast or lunch eats. Breakfast was an awesome green smoothie with spinach, avocado, tiny bit of mango, and vanilla almond milk. Lunch was Wolfgang Puck’s Creamy Broccoli soup with a carrot grated in with an apple and almond butter, and leftover cornbread. That soup? No bueno. It was not creamy but it was really oily. Gross! Sorry Pucky!

After work I went with Ross to a Dollar Store to replenish the prize store for his classroom (bribery works like a charm!). It was kind of fun, and I maybe got a couple extra scrapbook sets of stickers. ;) Then home to put my sick hubby to bed to sleep away, while I went to to grocery store and cleaned cleaned cleaned! (I did save 26.9% on my grocery bill – shop those sales and cut those coupons people!)

Man I am exhausted though – all that jumping, dancing, clapping and marching with loads of rambuncious kids will REALLY wear you out fast! So you know what that means – easy dinner! Perfect, because when we got home there was a lovely package on our doorstep. Look what I found inside:


I prepared this according to package directions (once your water is boiling it just takes 4-6 minutes to cook the pasta). While the pasta was boiling I sauteed 2 slices of prosciutto, diced, with a plum tomato, diced, and a drizzle of extra virgin olive oil. When the pasta was ready I placed the ravioli and some of the pasta water into my sauce mixture and added a bit of dried basil and dried oregano. Top with a bit of grated Parmesan cheese and yum!


It was such a yummy dinner. I loved these ravioli. I am a huge mushroom fan, and I LOVED how I go huge chunks of mushrooms inside the ravioli. Great job Buitoni! The only thing that would have made it better would have been had I had fresh basil and oregano instead of dried. Come on garden, grow!

Now it’s time for me to go relax. I’m literally exhausted. I may do some yoga later to stretch myself out some. And I need to decide if I want to have a “me” day tomorrow, or if I want to volunteer as a chaperone for the school’s field trip to a carnival tomorrow. hmm…

    Lindsey,

    Aww, your first day of school sounded quite eventful, but I’m happy it went well! :)

    I am a HUGE HUGE fan on all kinds of butters (apple, pumpkin, pear, peach..etc.) We go to a great farmers market that is run by Amish folk, and they truly produce some of the very best homemade spreads I have ever tasted.

    Stay tuned for a butter giveaway in the near near future on my page! I can’t wait to share some of these great finds with others.
