Orlando Weekend

Hello everyone! What a fun, busy weekend I’ve had! Let’s recap, shall we? :)

Yesterday we had a wedding to go to in Orlando, so we left here in the morning early enough to make a pit stop at Whole Foods before the wedding. ;) (don’t worry, non-perishables only!). Pics of some loot to come at the end.

Then to the wedding! It was a beautiful ceremony (is there ever a wedding that does not have a beautiful ceremony?? It’s all about love and God – of course it’s beautiful!) and a fun reception at an Italian restaurant. It was great being there because not only did we get to share in the bride and groom’s day, but we also got to catch up with loads of friends we have not seen since college!

Afterward we ran a couple errands to a few stores we don’t have in our small town. Yayyy for big towns! Then it was off to the in-laws! We had fun visiting with them and gave Ross’ mom her mother’s day gift: a Whole Foods giftcard to go along with a Whole Foods date with her favorite daughter-in-law (I’m her only DIL lol). She is very interested in nutrition and is always asking about new nutritional finds and such. And she hasn’t been to the big Whole Foods in Orlando yet! So I promised I’d take her around and be her personal nutrition guide for the trip. :)

We got back late last night and I was SO tired. I crashed hard. :) We awoke for a special treat Sunday oatmeal breakfast.


His + Hers (his = blackberries, peanut butter pretzel pieces, butterscotch chips, chocolate chips; hers = strawberries, butterscotch chips, chocolate chips). It was a very luxurious breakfast that I think ended up being around 285 calories. It was low in protein, but after a walk Ross and I split a clif bar so I got some extra protein there. :)

I finally tried some tofu in a green smoothie. Not a fan. It did make it creamier, but if I’m going to have a creamy smoothie I’d rather just use almond milk and frozen avocado. Plus I think my tummy being bothered by soy has finally caught up to tofu too – my tummy ached for hours afterwards! Hubs cheered though, “Yes, no more tofu!” haha. :)


Dinner tonight was an old family favorite – chicken cordon bleu (it was actually one of the choice entrees at our wedding reception!) and roasted asparagus – one of my most favorite veggies ever!


To make chicken cordon bleu I just pound out a boneless skinless chicken breast until it’s one even, thin piece. Then I season with some pepper and layer with a slice of thinly sliced swiss cheese and a slice (or two, depending on how small your slices are) of ham. Then roll, secure with toothpicks, dredge in flour, and brown in some EVOO in a skillet. Once all sides are golden brown I finish cooking in a 350 degree oven.

Roasted with misted EVOO, kosher salt, and ground pepper.

All together with my Pom Spritzer (pomegranate juice and club soda). I had half the chicken, all the asparagus (duh!) and one slice of bread.


Now for the Whole Foods goodies!


2 packages of Whole Foods Mac N cheese, crystallized ginger*, Medjool dates*, quinoa, nutritional yeast*, brown sweet rice, 4 bars, liquid smoke*, raw agave nectar, and 2 cans of coconut milk for hopeful coconut milk ice cream making. :)

Some of these products (the ones with the *) are new to me, and I’m so excited to try them!

And of course to end today, last but CERTAINLY not least, I have to wish a wonderful lady a Happy Mother’s Day!! Happy Mother’s Day mom! I love you!

(Hopefully – it’s a CRAZY week at work with music teaching, the film project this week so I’m doing some set management, helping to take care of the kids, set up, food/ craft service, lunch coordination/ picking up/ delivery, catering dinner for everyone Tuesday night, delivering all nightly dinner supplies wherever they need to go, preparing desserts for lunch every day..ah! I’m already looking forward to next weekend when we’ll be in Sarasota!! (I’ll be getting my hair chopped off and spending some time with the fam before my sister’s 20th birthday on the 18th!)

    Sounds like a fun, fulfilling weekend with friends and family. Those are the very best!
