Apple Oat Bran Muffins

Good morning!!! It’s almost Friday and then the weekend is here! :)

In spirit of my No Cereal challenge, I made muffins this morning! I didn’t use a recipe because honestly I like creating recipes instead. :)


Apple Oat Bran Muffins
(makes 12 muffins)

  • 1 egg substitute (I always use 1 TBSP ground flax + 3 TBSP water – let it sit a few minutes before adding other ingredients)
  • 3 Tablespoons unsweetened applesauce
  • 1/4 cup agave nectar
  • 1 cup light vanilla soymilk (or any other milk/ milk substitute)
  • 1 cup whole wheat spelt flour
  • 1 cup oat bran
  • 3 teaspoons baking powder
  • pinch of salt
  • 1/2 Tablespoon of cinnamon
  • 1/2 teaspoon of pumpkin pie spice
  • 1/2 cup chopped dried apples
  • Turbinado sugar (optional to make a sweet, crunchy topping)

Preheat oven to 400*F. Mix all of the ingredients through the spices. Stir in the dried apples. Liberally spray a muffin pan with some sort of non-stick spray (there is minimal fat in the muffins so they’ll want to stick!). Spoon batter into the tins. If desired, top each muffin with a tiny bit of turbinado sugar. Bake for 15 minutes. Let cool a few minutes and enjoy!


The taste? A hearty, whole grain, lightly sweetened delicious little muffin. I will gladly continue enjoying these and I think this recipe will soon go on the recipe page. :)

With my breakfast I also enjoyed a juicy pear and a glass of iced unsweetened pomegranate goji berry green tea that I brewed yesterday afternoon. Delicious!!


I think my No Cereal Challenge is off to a great start! (Don’t worry though – even though I have 11 muffins left, I won’t be having a muffin a day for the next 11 days! Most of these muffins are freezer-bound!).

    Those look great! I'm nervous to have muffins for breakfast because I feel like they don't hold me over that well but these look pretty hearty!

    I wish I was able to create a baked good from my head. When it comes to cooking, this is absolutely no problem, but if I would try to bake something without excplicit instruction, it would be disasterous.

    Acutally, even when I do bake following the recipe, it usually comes out disastourous. Haha, oh well, I'll stick to cooking and just drool over your yummy baked goods! :)
