Favorite Chore

Breakfast wasn’t enough for me today, I needed breakfast for lunch, too! I had a green smoothie (2 kale leaves, light vanilla soymilk, frozen mango, frozen pineapple) and some classic comfort oatmeal with just a pinch of brown sugar on top. :)


Definitely having blender issues though! Yikes wouldn’t that be a mega appliance fail? My blender just can’t handle more than 1 kale leaf or it gets too chunky and chewy – two adjectives not meant for smoothies.

I had a fantastic sweat sesh again today! I hit up the gym with a new book and 45 minutes of hills, level 5 resistance absolutely flew by! I also did another 15 minutes on a lame elliptical (lame because you can’t increase the incline) just to see my thoughts on that machine. :)

Ross worked late tonight getting everything ready for his class (students come Monday!) so I roasted some veggies and baked some polenta rounds and left them in the oven turned off until he came home.


My veggies included eggplant, tomato, garlic, onion and black beans roasted in red wine, balsamic vinegar, dash of EVOO, Italian seasoning, kosher salt, and ground black pepper. I love such simple tasty combinations! Plus it used up a lot of leftovers in my fridge. :)

Just in time for a post-dinner grocery shop! Totally my favorite “chore”. (Seriously? This is a chore? Let me grocery shop for those people as a job lol!).


I did pretty well, if I do say so myself. :) Added to what we currently have in the pantry (beans, grains, some chicken in the freezer for Ross), what you see here could get us through at least 5 days of meals for two people. There are a couple other things I need to pick up (coconut yogurts), but I got all of this for $22.49! Please go ahead and tell me that eating healthy is expensive. Please.

  • romaine hearts
  • Ross’ skim milk
  • Ross’ OJ
  • green beans
  • asparagus
  • Florida avocado (aka slimcado? It was cheaper so I figured I’d try it!)
  • red bell pepper
  • bananas
  • 2 cucumber
  • 2 zucchini
  • lots of plums
  • lots of peaches
  • Roma tomatoes!

I hate fruits and veggies. ;)

    Andy is setting up his classroom too. I think he's excited to finally be going back to work.

    yum yum look at all those pretty veggies!! Florida avocados are good! at my old house, we had a HUGE avocado tree… during the time of the year when they would ripen, we couldn't park under that tree…. or we'd have dented cars.. :P Sadly, the past few yrs, we've only had 2-3 avocados that fell and weren't eaten by squirrels… haha.

    I am impressed. What do you use to suppliment? I feel like the rest of the stuff is what costs us the most. The pasta/rice/meats (for nate)

    Chewy smoothies is kind of like cookie dough ice cream – kind of fun sometimes but my mouth gets confused ;)

    I LOVE grocery shopping – it's my favorite chore as well!

    Grocery shopping is my favorite!! Sometimes I have to give myself a time limit so I don't spend too much time just looking around.
