My afternoon was spent analyzing page after page of different health insurances. Ah, the joy and exhilaration of being a responsible adult, eh? hehe I now feel “experienced” enough to get a job in the insurance industry, though.
I know tomorrow is September, which is definitely more of a “Fall” month – but here in Florida I’m still craving summery salads.
Tonight’s salad featured spinach, peach, strawberries, alfalfa sprouts, mozzarella, avocado and a drizzle of Annie’s raspberry vinaigrette. With a hunk of sourdough bread.
Ross proclaimed he wanted “a salad on bread” (lol!) so he made a salad sandwich – carrots, lettuce, celery, pickles, tomato, parmesan cheese and honey dijon mustard.
Tomorrow starts my vegan challenge! I’ll kick the day off with an “explanatory” post, but if you’re interested and aren’t sure what eating vegan entails, it’s basically no animal products at all – no meat, poultry, fish, eggs, dairy, or any animal-derived food (many vegans won’t even eat honey, but I’m more flexible on that point).

I'm so in on your challenge. I need a challenge to kick off for September! okay, this may be hard but I know I can commit to one day! This will help me, I was vegetarian years ago and would like to do it again. I'm excited. I just need to pick a day now. I'm picking Thursdays!
