Vegan Calzones

Hey friends! Since I last saw you, I had a fabulous workout! I adore the treadmill my parents have. It has shocks so it feels awesome! Plus it has a number pad so you can change pace with the press of one button. And it has a fan that blows on your face. I love that thing. :)

I also love when every workout you have, you can feel yourself getting stronger. That’s how I’ve been feeling lately. I’ve been trying to get back into running (slowly – I have asthma and a misaligned kneecap), and even just starting back at run a minute then walk a minute for 30 minutes has been awesome, in terms of seeing improvement every day. I run every other day and do some other form of cross training on days in between. I also try to do some form of strength training and stretching every day. (With one rest day a week, unless my body is calling for something different).

So I felt awesome when I was done with my treadmill time today, tomato face and all. ;)

Tonight calzones were on the family agenda. I told my mom that I was totally fine with filling mine with just veggies and sauce. One of my biggest things throughout my vegan challenge has been to make sure the food is easily accessible, and not a budget-buster, as so many “specialty” items can be.

However, when we were at Whole Foods we found this dairy-free, gluten-free, casein-free vegan soy cheese and my mom offered to pick it up. I’m really glad I did because this stuff was awesome! It has a different texture than real cheese (closer to the texture of fat free cheese), but it had a good flavor and was definitely not bad at all.


I loaded my calzone with vegan cheese, spinach, roasted bell peppers, roasted garlic, and mushrooms.

It was quite delicious. Ashley and Ryan - this was pretty close (if not the same?) as the kind of soy cheese Pizza Fusion uses on their pizza. Same kind of creamy taste. I’m so glad I have a lot of this left to use in other forms. :)

P.S. – I totally devoured this whole calzone, with some marinara on the side. :)

While my fam noshed on chocolate cake for dessert, I noshed on half a vegan chocolate chip cookie from Whole Foods. Yum.


My night is now complete.

I do need to think of some sort of “special” vegan dessert that I can make tomorrow night. My mom has made a chocolate truffle cheesecake for dessert for the fam tomorrow night. It looks so good and I’ve always loved it!! However, I know as much as my tongue would enjoy it, my stomach would not thank me later. I’m thinking of some sort of coconut-based creamy dessert of my own. :) Suggestions?

    That calzone looks awesome! I would love to try a Vegan challenge. The wheels are turnin in my noggin.

    Good luck with the dessert! I bet you can come up with something great! Angela and Gina always come up with great ideas for vegan desserts!

    My vegan friend who turned me vegan loves the nacho flavor of that cheese. I personally hated it and am turned off vegan cheeses but maybe I should give the mozarella a try in calzone or pizza form??

    If u are up for "stocking" your vegan pantry you could try your hand at the smlove pie in veganomicon. It gets rave reviews online and it goes over well with omni's. Try google books preview if u forgot ur cookbook. Also smores cupcakes from vegan cupcakes take over the world? U can see the recipe in google books preview.

    Omgosh what an awesome calzone!
    I can't believe how well the vegan cheese melted!
    Good luck finding a vegan dessert, there are so many good blogs out there, I'm sure it will be no problem!

    Calzzzzzooone! So cheesy so delicious so bready–I love it! haha

    My old roomie and I used to go to Mellow Mushroom (local pizza place) once a month and polish off a whole calzone EACH. I used to get pepperoni. It was literally the size of 2 of my heads. No lie. And I ate it all. It was fabulous!

    Your calzones look alot healthier! So it would be okay if I polished off one of yours. :)

    1. Your parent's treadmill sounds really nice!! At my univserity's gym they had bikes with fans on them – loved it!
    2. I'm so happy to hear that you're feeling the benefits of your workouts! So many people push themselves too hard to fast but when it come to working out, slow and steady wins the race – your work out technique/schedule looks fantastic!

    that calzone looks great! i def need to try that! and i know that sarah from lov'n in my tummy tried a nutr yeast/walnut/something else cheese if you wanted to try that as a sub…i'll try to find the link somewhere!

    A veggie calzone sounds so good. That's what I miss about My mom's place, I have a treadmill there. I just don't feel like moving it to my upstairs apt.lol

    CUTE! What kind of dog is that?!

    I love soy cheese and rice cheese (I usually get soy though since it has more nutritional value-more protein.) I think the Veggie Slices brand is delicious on melted sandwiches.

    I'm so jealous you're getting to spend time with your family. I want to visit mine :( I hope it is cheering you up. And hey, what a blessing that you can visit your family instead of having orientation at a job or something! Maybe you'll have to stay longer!

    Sarah – you are right, I am so blessed to be able to spend time with my family and have them close. :) I'm still going back to G-ville tomorrow, but it's good to know I can come back if stuff gets rough again. :)

    wow that really looks amazingly delish!! I have been so bad with cooking lately, I can't wait to get back on a more steady streak
