Labor Day Burgers

Happy Labor Day! I hope those of you who had the day off made the most of it. :)

This morning I had an un-pictured bowl of Kashi Heart to Heart Oats and Wild Blueberry Clusters cereal with soymilk. Un-pictured because I have been so ridiculously beyond exhausted all day today. Thus, I’ve been a tad lazy. ;)

However, I went on a scavenger hunt after breakfast. Last night when my family went to the park, I somehow lost the lens cap to my Nikon D40!!! Convinced it was a lost cause but I should still try anyway, Ross and I spent an hour (maybe more?) at the park, searching everywhere. I finally found it though – in the middle of the knee high grass, of course.I felt so victorious. At least I got some good walking in. :)

After we wrapped up our time in Sarasota we hit the road – we weren’t going to stop for lunch but soon became famished! Subway time! 6 inch (or so they say – smallest 6 inch I’ve seen) honey oat with lettuce, tomato, black olives, cucumbers and green bell peppers with a touch of honey mustard. Not the best Subway sub ever but it worked.


Not for long though! After I managed to fall asleep for 30 minutes in the middle of the day, I eased my hunger with a handful (err, or two) of blue corn chips. Yum!


Once we got back to Gainesville, Ross and I lived it up on the rest of our Labor Day. We went grocery shopping!!! :D Ward’s for local, fresh, cheap produce and Publix for the rest. :)

We did make a pretty awesome dinner though. :)

I will say this – one fun, unforeseen result of my vegan venture is that Ross and I are getting in the kitchen together more. Especially nights like tonight where I go herbivore and he goes carnivore. :) Burger Night – meat and ‘shroom. :)

I grilled (on the George Foreman) a large portabello mushroom rubbed in extra virgin olive oil, balsamic vinegar, liquid smoke, salt and pepper. When it was done I placed it on a toasted whole wheat Arnold’s Sandwich Thin with Trader Joe’s roasted red pepper spread, ketcup, mustard, avocado, lettuce, tomato, alfafa sprouts, and vegan monterey jack cheese. This burger was phenomanal. Juice, soooo flavorful – oh gosh, it was good.


We ate out burgers with cassava fries (aka yuca fries) with ketchup and the juiciest, sweetest watermelon (thanks mom and dad! – they gave us the other half a mondo melon).


Well, since I can’t stay awake for the life of me today, I’m going to go to bed soon. However, Ross made me vegan brownies tonight (I know, what a winner!?!?), so I’m pretty sure a vegan brownie and a glass of almond milk will be in my picture. I’ll take a pic and share in the morning. :)

(P.S. Tiredness, salty snack and chocolatey dessert – wonder what time of the month it is??)

    Haha, I hear you on the whole dessert, tiredness, etc part ; )

    Glad you found your lens cap! I bet you're glad you went and looked even though you thought it would be a lost cause. At least you realized it was lost when you did!

    Dinner looks like the perfect Labor Day meal. I love Porto Burgers. Such a great sub from the real thing.

    Yea, good thing you found the lens. That's so sweet that the hubby made you vegan brownies. I like cooking with my bf, it's a fun bonding experience!

    Glad you found your cap!! Grilled portobello mushrooms are one of my favorite things – a restaurant by me marinates them in a sweet balsamic dressing before grilling them and it's SO GOOD! It sounds like what you did :)

    That's awesome that you found your lens cap. The shroom burger looks great. I'm a bad vegetarian because I just cannot make myself like mushrooms, even though they look so pretty.

    How sweet that he made you brownies. And I'm right there with you on the time of the month ;)
