Carb Wench

So if any of you ever had any doubts that I wasn’t “real” and I was too gourmet/ unpractical in making all these dinners all the time, well tonight’s your night. :)

I had just finished writing a lengthy product review (you’ll see it around noon tomorrow!), Ross wasn’t home, and I just did not feel like prepping and cooking the quinoa and veggie stuffed red bell pepper I had planned. Not happening. So I kicked it college style. No, who am I kidding – I cooked way better than this in college. I flat out just didn’t cook tonight. :) I present to you the dinner of champions: a carrot, an apple, raw almond butter, and flax flakes with almond milk and cinnamon.


Hey, I got a vegetable, fruit, whole grain, healthy fat, and protein. It’s truly not too shabby. Right? Right?!

P.S. Those flax flakes with cinnamon?? Heck yeah, awesome! Those of you with a Publix – it’s the Greenwise Flax Flakes for $2.29/ box. Usually boring, but the cinnamon makes it fantastic.

However, when Ross got home we both were craving a snack that we could munch on together. And for once it wasn’t a sweet snack I was craving (who am I!?!?). So I quickly sliced some thin, small slices of whole grain baguette, put on some Earth Balance, garlic powder and parsley, toasted them in a nonstick skillet and served with an easy bruschetta topping – tomato, dried basil, a touch of salt. Easy and tasty! We split this plate equally. It’s how we roll.


Then Ross called me a carb wench. Psh, whatever.

Ok, so maybe I love carbs. Maybe I have my entire life. But that’s what my ever-evolving pursuit of a healthy lifestyle is good for (and apparently, my husband too) – reminding me to keep things in check. :)

Now, I’m going to bed. You can find me in the gym tomorrow morning. I’m hoping to get up before the sun with Ross and either go to the gym or run outside with the deer with him (he saw 7 deer by our apartment this morning).

(Right now in the back of my head: yeah right, you don’t have a job – the one pro is that you can workout whenever you want). We’ll see. :)

    What a fantastic snack. It's so gormuet!

    Ever since I saw Julie make that amazing looking bruchetta in Julie and Julia, I have craved it and make it a few times a week. I love how she pan seared the bread and now I do this all the time. It really brings out the flavor of the bread and makes it spectacular!

    I feel like that everyday too…no job, no excuse not to workout. it kind of sucks! And I'm a total carb wench too :)
