Pizza-holic

Thanks for your comment on my humble abode earlier. ;) I by no means claim to have the best decorating skills, or the best apartment (trust me, there things I’d change – my “perfect kitchen” will not be white!), but I do think I have done a fairly good job of doing things on a small budget. :) I’ll put together a post in the next few days to share with you guys about decorating/ home-making on a budget.

I really had such a relaxing afternoon. I baked a newly created Almond Spice Banana Bread (recipe to come tomorrow morning).


I cuddled and napped with Ross once he got home. :) (still not sleeping at night…averaging 4 hours off and on throughout the night).

Then I hit the gym! I don’t think I’ve told you all this, but Ross is starting to train for races. He’s run for years, it comes naturally to him, and he’d like to one day run a marathon. Obviously I’d like to be out there running with him, but I’m still sticking to low-impact exercise until I have no pain.

So while he was out running, I hit up the elliptical for a hot and sweaty 30 minutes. It was only 30 minutes but man I pushed hard. I love that I can actually push myself on low-impact machines instead of having to keep holding out on myself to prevent further pain. Came back, chugged a little gatorade/ water combo (felt headache coming on), showered and dinner time!

Dinner. Ummm, we have a pizza problem. We love pizza, any way shape or form. :)

Tonight’s featured Jenna’s Best Pizza Dough (with a hodge podge of whole wheat pastry flour, spelt flour, and whole wheat flour PLUS a ton of dried herbs) and these local, organic baby eggplants I found.


We topped the dough with a sauce of crushed garlic (4 cloves), rosemary, and about a Tablespoon of EVOO. Then layer with thinly sliced tomatoes, baby eggplant and chopped spinach. Bake for 15 minutes and voila!


I love pizza, and honestly when it’s just whole grains, moderate healthy fats, and veggies, I really cannot think of pizza as being “bad” for me!

I gotta wrap this up because Man vs. Food is on the Travel Channel right now, and he’s in Sarasota!!! (My hometown)! Can’t wait to see what this is like and where he goes. :)

    I really feel that the ET provides an EXCELLENT cardio workout. It's also so easy on the joints and knees and perfect for getting in some great cardio without the pressure ware and tear from running. I love the ET!

    Oooo, Pizza obsession is nothing to be ashamed of my dear. Especially, when it tastes and looks as good as that!!!! Also, I fully beleive that pizza can be one of the most nutrious meals so long as you make it correctly, which you in fact, have! :)

    go Ross!!! My bf and I decided we are signing up for a half marathon as soon we know he will be able to stay in the country!

    Mmmm that bread look super yummy! After watching the Man vs. Food SRQ, I WANT SOME PIE! I just made that peanut butter pie too…my mom got the recipe from Yoders!

    aw, look at the cute lil eggplants!! I love making homemade pizza.. it's always so much fun to make with some one!

    A question for you.. Is your goal to become a vegan or are you just trying a little experiment for 1 month?

    Hey girl! I love the pizza. I think if I could make it the way you do, I wouldn't think of it as unhealthy either — unfortunately my hubby prefers the take out kind, which I do not.

    I also wanted to tell you that so far in September I've had 4 completely vegan days :) I'm hoping by October I'll be ready to go 100%! I feel so good it's not even funny.
