Berry Almond Granola


Breakfast this morning was another meal I’ve seen floating around on some blogs: Smoothie in a Bowl!

I took my leftover smoothie from lunch yesterday (soymilk, spinach, frozen mango, flax, ice, splash of OJ) and threw it in a bowl. On top I added 1/4 cup of an easy granola I made last night.


Berry Almond Granola

  • 2 cups old fashioned oats
  • 1 cup dried berries (I used a package of Newman’s Own Organics dried Berry Blend)
  • 1 cup chopped raw almonds
  • 2 Tablespoons canola oil
  • 2 Tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract

Mix the ingredients until everything is evenly coated with the wet ingredients. Bake in an oven at 250 degrees Fahrenheit for around 45 minutes (depends on your oven and the type of dish you use. I baked mine in a 9×13 Pyrex dish, so it was s little deeper). Occasionally stir the granola around while its baking. Even if the granola doesn’t feel too crunchy right away, leave it be – it’ll get a little more crunchy as it cools.

Easy, right? I was amazed at how simple this was to throw together during a commercial break last night.

Speaking of commercial breaks…well, I loved Castle. No disappointments there. :) House on the other hand…hmm. Is it just me or was it kind of weird? I mean, I’m glad he’s becoming more human and all, but if he’s like this the entire season it’s going to be a different show. Plus I think I missed the rest of the cast last night…didn’t we only see House and a little bit of Wilson? Just not what I expected. Your thoughts?

    I was watching house last night while we chatted… we did only see House, but here's the thing: i think it's going to preface a whole new array of crazy when he gets back to work!!!

    Wow, leftover smoothie? you can do that? i always thought that smoothies would go bad in a few hours, so I can't have them in the morning because making them would mean I would wake up my bf in a very ugly non romantic way :D

    littlemissminny – I didn't want to throw away my leftover smoothie from lunch yesterday, so as soon as I was full I immediately stuck it in the freezer. This morning I just kept microwaving it for 30 seconds at a time until it was a little more of a "smoothie texture" again. It got a little icy, but no big deal. :)

    Love the oatmeal! I am excited for oatmeal. It suits me better as the temperature gets cooler.
