To follow up my announcement from this morning that I am continuing on my vegan venture, now’s the perfect time to share that I’ll be participating in Vegan Month of Food!
Basically, the month is all about vegan food! In addition to showing my daily meals and how easy it can be to eat a vegan diet, I’ll also try to throw in a few posts on different topics within veganism. Any ideas/ questions you guys are interested in?
Lunch today was pretty tasty – I’ve been craving a lot of simple foods lately, and uncombined foods for some reason. As always, since they’re healthy cravings I listen.

The other half of my pear from this morning, a serving of nonfat refried beans, and a whole wheat English muffin sandwich with spinach and 1/4 cup roasted butternut squash mashed with cinnamon and Smart Balance. It worked, and I think I got all the food groups covered.
Alright, well I’d love to stay and chat but I need to get my rear in gear! With the prep and launch of SE (Sound Eats) earlier this week, plus Ross working late..well, let’s say our home needs a little TLC to get up to my clean freak standards.
Then a workout, shower and I’m off for a hot, romantic date with my hubs!
Well, maybe not so hot and romantic. More like grabbing burritos at Moe’s with a giftcard and heading to his high school’s homecoming football game. It should still be fun – after all, I am with him.
Plus I haven’t been to a high school football game in AGES! I’m expecting tons of memories to come flooding back, haha.

VERY interested to see how “easy” eating vegan can be. Can I do it part-time? Or does that negate the whole thing??
I personally think trying to eat vegan part-time is a great way to test it out, ya know? That’s kind of how I started – trying out some vegan meals. And here I am!
And it can be very easy, especially if you love fruits and veggies. Hopefully you’ll get some more ideas here, dear!
