Stuffed Quesadilla

As I should have predicted, my stomach was crying out for food shortly after my lunch. I loved my lunch and it was full of fiber from veggies, protein from garbanzo beans and healthy fat from avocado. However, I just need my whole grains and carbs! I noticed that on a vegan diet the meals that are most satisfying to me are ones that include greens and other veg, whole grains, protein and healthy fat. It works! So I dove into a small-ish whole wheat pita.

As it was raining and I just didn’t feel like dealing with jogging in the rain, I went to the gym. I did 30 minutes of run a minute, walk a minute on the treadmill which went great – no shin pain to report of! I really hope this can keep up, there are a few races I have my eye on.

Dinner was an autumnal-stuffed quesadilla. Or an over-stuffed quesadilla. ;)

Inside my whole wheat tortilla was:

  • mashed butternut squash (with a touch of brown sugar, cinnamon and vanilla rice milk)
  • toasted garbanzo beans (toasted in a nonstick skillet with cumin, paprika, garlic powder and kosher salt)
  • spinach
  • alfalfa sprouts
  • vegan cheese (this is really optional – I had it on hand for some vegan calzones later in the week)

I heated it on both sides in a skillet, cut and served. With all the veg in here this quesadilla was super filling!

Now I’m just muching on a few Ghiradelli’s semi sweet chocolate chips (they’re vegan!) to satisfy my chocolate craving. Almost time for my Monday night show – Castle! Good night friends!

    I love your quesadilla! It sounds so delish. I’m not vegan, or even veggie, but I do love the meals I see on vegan websites! They always seem so colorful and creative. I like to have meatless meals often, this might have to be one I try!

    omg those look sooo good! what a great idea to toast the chickpeas with thsoe spices and combine them with the butternut squash! the combo is making my mouth water!!

    WOw, girl look at us totally on the same food wave length today! That is so crazy that we both had a craving for the exact same thing. And what is even more ironic is that its not your usual burger and fries kind of craving either. What a conncection we have! :)
