Pumpkin Pie

Dear Flu Fairies:

Please leave my husband alone. I really miss sleeping on my bed. And don’t even think of trying to get to me. Me and my BFF lysol will kick your butt half-way to Mars.

So that sums up my life as of late. :) It’s ok though – Ross isn’t a huge fan of all things squash and pumpkin (I know, right?!?) so I’m getting in all of my favorite fall flavors on an almost daily basis.

Like pumpkin pie for breakfast.

Yup, you heard me, pumpkin pie for breakfast. I swear this tastes better than pumpkin pie because it’s delicious and you know it’s good for you, too.

Pumpkin oats contained:

  • 1/3 cup each oats, rice milk and water
  • a couple drops of vanilla extract
  • 1 Tablespoon ground flax
  • 1/2 cup pumpkin puree
  • 1 Tablespoon almond butter
  • LOADS of cinnamon and pumpkin pie spice
  • 1/2 teaspoon of maple syrup
  • raw pumpkin seeds for garnish, crunch and more protein

I cook the oats until they’re almost done and then stir everything else in. The other thing about this breakfast is that because it is so filling it will take you forever to eat. :)

I enjoyed mine with vanilla rice milk, and I also just had a glass of calcium enriched OJ – you know, just to show those flu fairies who’s boss. ;)

    Pumpkin oats always sound so good, but I’ve made them a few times and I never really liked them! I love pumpkin, so it’s very weird. It certainly looks delicious :)

      Try it with the touch of maple syrup, almond butter and LOADS of spices – that’s what made me like it (I didn’t like it the first time I tried pumpkin oats, either)

  5. Ohhhh this looks good. Pumpkin ‘pie’ for breakfast. I bought a gigantic can of pumpkin yesterday and will have to try this out on Saturday morning!

    I will also put in a request for you to vacate Ross and Lindsey’s home immediately. Trust me, you are only helping yourself here…there is waaaayyy to much Lysol and antioxidants in that house for you to survive very much longer. Thank you in advance for your swift departure.

    I love this kind of breakfast! What a great way to use squash this time of year – currently I’ve got a bunch of butternut lying around. Stay healthy, rest up and drink those fluids!

    I wish it were just that easy to write a letter and the flu fairies would swiftly move on to their next victim… I could even suggest a few names and houses for them to go to instead…

    I just browsed through a bunch of your past recipes and boy, do they look good. This one sounds darn tasty too, but I think I’m most likely going to stick with my bowl of cold cereal for breakfast… but I’ll dream of trying this one some day instead…
