College Kid’s Bruschetta

Quick, describe your eats in one word. Ready, go! Voluminous. (Well, vegan too, but that’s given). I thought I’d continue my volume eating from this morning over to my lunch. Last night I had a simple dinner of soup and bread. I took the leftover cup of lentil soup but bulked it up with some steamed veggies.

  • a few baby bella mushrooms, chopped
  • a handful of spinach, chopped
  • a handful of broccoli slaw (basically shredded broccoli stalk for those of you who haven’t seen it)

I simply steamed them in the microwave with a little water, then added the leftover soup and some cumin and paprika and heated through. Topped with avocado because I’m addicted to that creamy, potassium-rich fruit.

On the side I had a “bruschetta” so simple a college boy could make it in his dorm room to impress a lady friend. ;)

I simply toasted a whole wheat English muffin and topped it with the bruschetta topping (1 chopped Roma tomato misted with EVOO and seasoned with kosher salt, garlic powder and dried basil). Told ya it was easy, and you can use any kind of bread as the base, too.

I think the volume eating ends here though. On the menu tonight is vegan calzones and I also have a bottle of champagne chilling, just because. :)

Also – I forgot to share my workout yesterday! It was a good one, as my arms felt like complete jello afterwards.

  • Elliptical, resistance 7, 30 minutes (I couldn’t bear to do more, I was so bored!)
  • Bicep Curls (35 lbs, 3 sets of 10 reps)
  • Seated Row Machine (50 lbs, 3 sets of 10 reps)
  • Butterfly Machine (30 lbs, 3 set s of 10 reps)
  • Vertical Chest Press (50 lbs, 3 sets of 10 reps)
  • Tricep Press (50 lbs, 3 sets of 10 reps)
  • Shoulder Press (15 lbs, 3 sets of 5 reps) <–My arms were practically useless by this point!
  • 100 crunches
  • 50 reverse crunches

Time to go get in my workout today, meal plan, grocery shop and maybe get a little baking going. Happy Friday afternoon, friends. :)

    I couldn’t agree with you more! I am only satisfied when my plate is full. I am all about loading on the veggies to add volume. It doesn’t matter how hungry I am, if you serve me a tiny little pathetic portion, I won’t be satisfied. We DEFINITELY eat with our eyes too!

    Yum! Bruschetta is one of my all time fave foods but I rarely make it for myself. I should more often.
