Happy Saturday! The weather is cool, crisp and delicious this morning! I am absolutely itching to get outside. Hubs and I have a fun outdoor outing planned for today, so we fueled with a very fall-esque breakfast. Caramel Apple Oats. Oh yes, I went there.

For 2-3 people:
- 1 cup each oats, rice milk and water
- pinch of salt
- tsp. cinnamon
- T. golden flax [prepare the above ingredients on the stove top]
- 1 granny smith apple, cored and chopped
- small spoonful of Earth Balance (or other vegan margarine/ butter)
- 2 spoonfuls brown sugar
- dash of cinnamon [cook until sauce is melted and apples are tender]
- garnish with roasted peanuts (or pecans or walnuts if you’re not allergic to them!)
I served Ross a portion double mine, hence why it’s 2-3 servings. It was quite the palate-explosion! Creamy and comforting cinnamon oats with soft tangy apples in a sweet sauce with some crunchy saltiness of the nuts…oh baby!
