Homemade Homebody

Hey friends. :) Today was such a homebody day for the hubs and I. Lots of rest, sweatpants and sweatshirt, windows open, napping, comfort foods…’twas enjoyable.

Our chilly morning started with a walk to Publix to pick up some pancake mix. This was the only non-buttermilk/ vegan whole wheat pancake mix we found, so we grabbed it up.

Mr. Pancake Master himself served me the three pancakes you see below (that went with my decaf chai tea). Is it just my household or are pancakes totally a guy thing? Ross loves breaking out the griddle and making pancakes.

Fast forward to dinner, and you have the delicious wine-scented, roasted vegetable soup you see below.

I definitely wasn’t using a recipe and I didn’t keep very good track of exact measurements. Here’s what I do know!

  • I used lots of water and 1 vegetable bouillon cube.
  • 1 cup lentils, 1 cup barley (both measured dry)
  • 1 cup wine!
  • Roasted vegetables: about 5 cloves of garlic, 1 small onion, 3 chopped carrots roasted in olive oil, splash of white wine, splash of balsamic vinegar, salt, dried basil, dried oregano, pepper and a sprinkle of sugar
  • Lots of spinach and arugula stirred in at the end.
  • I also seasoned with some extra cumin, paprika and oregano to add a bit to the flavor.

I tried to make a peach cobbler for dessert, but it turned out just ok. I was trying to use up some peaches that were on their last leg, and I’m not sure they were even good enough for the cobbler. Oh well, I’d rather try to use up food than toss it out without trying!

I also made Ross some no-bake cookies (veganized with Earth Balance and rice milk, plus added peanut butter) for the week. I saw that Heather made them recently and it brought me back to making them in my home economics class in sixth grade. I loved that class! I knew Ross would love the chocolate-peanut buttery sweetness, too, so I gladly made them for him.

I love days like today. Slow, quiet, peaceful, full of simple homemade foods, and of course time with my love. :)

Time for me to go relax with my cup of chamomile tea and perhaps the Next Iron Chef? Anyone else watching?

    Sounds like the perfect Sunday to me :) Those kinds of days are my favorite too.

    I’m in the same boat about using things up. If I am going to potentially throw something away, why not at least give it a whirl. At least you tried!

    No bake cookies are the best. Glad you liked them.

    In this household I made the pancakes! I even make separate batches for each of us since my stomach can’t handle whole wheat and Rob loves being healthy. You are lucky to have a man to make pancakes (in my opinion, one of the greatest foods of all time) for you!

    Yay for homebody days :) Glad you and Ross had such a good one! I personally think your peach cobbler looks fab – sorry it didn’t turn out quite the way you wanted it to.

    I love days when I veg out and stay home! I really want pancakes now.. Maybe breakfast for dinner tonight :-)

    Those no bake cookies look good, they are one of my favorite treats during the holidays and I will definitely need to veganize mine this year. Great idea :)

    Wow that soup sounds super good! I’m going to have to keep that in mind.

    I’ve never had a guy make me pancakes, but I sure wouldn’t mind it ;)
