Thanks for the feedback on my Operation Beautiful note this morning. I’m so glad it reminded some of you the same thing that I reminded myself: we are enough right now.
This morning has been so wonderful because the weather is making me all smiles. I have made the executive decision that for today and early tomorrow there shall be no smoothies, salads, or anything cold! We must make the most of this weather with warm meals and hot tea.
Enter: leftover vegan chili with the other half of my pear from breakfast and a sweet treat of a slice of pumpkin chocolate chip bread.

I’m going to keep munching on some baby carrots while I put in a few job apps and then hit the gym! By the way, I finally added the the pumpkin chocolate chip bread recipe (and it’s vegan!) so check it out and let me know what you think.
What are some of your favorite winter foods/ meals? I love chili, soups, stews, and Italian dishes. I think because they’re a little heavier, I’ve always associated traditional Italian dishes (chicken parmesan (or tofu now?), spaghetti and meatballs, gnocchi, etc.) as heartier food for colder months.

Definitely love soup, stews and some heavier portuguese traditional cuisine. We don’t eat it often thankfully but it’s comfort food at its best.
I love squash, soups, stews, and seasonal pies (pumpkin!).
I am with you on the chili and stews! I also love lasagna or ukranian cabbage rolls. Mmmm!!!
That looks like the perfect Fall meal! I love chili, especially in Michigan. In Arizona, it doesn’t give that same hearty warm feeling–I’m already warm! haha
I love soups and stews too – I made one here that is vegan (I think) here:

Chili and bread is one of the best comfort meals in the fall. Your lunch looks like a recipe I make for Pumpkin Black Bean Chili and Pumpkin Cornbread. It’s one of my favs.
Hope you had a great day!
I love soup this time of year. My friend Courtney makes a really awesome taco soup with beans and veggies. We’re having it on Wednesday, yippee!
pumpkin soup, pumpkin muffins, pumpkin pie, veggie soup and chicken and dumplings….. yum yuuuum. We made pumpkin soup (and muffins and roasted the seeds) this weekend…I was in heaven
