This morning flew by! Several exciting opportunities ahead, one of which you’ll read about below!

Lunch was delicious, but photographed with my point-and-shoot. I love you all, but when it came down to eating my hot lunch right away or waiting to let the Nikon’s battery charge…well, we know how this story ends. ;)

I sauteed about a third of a block of lite firm tofu (cubed and pressed) and a small zucchini in a drizzle of sesame oil and a sprinkle of ginger powder and kosher salt. Then I added some leftover kabocha squash and a smidgeon of Whole Foods Organic Soy Ginger sauce and lunch was served.
