Lessons Learned

I learned today that the little spoonful of almond butter in my pumpkin oats makes a big difference in me feeling fuller longer! Gotta love healthy fats and protein. :) I was hungry much sooner than usual today.

I learned today that when grocery shopping I must remember that I love vegetables and I need to buy more so I don’t have slim-pickin’s mid-week. I still managed to very creatively combine some of the last produce in the house for my lunch.

  • 1 zucchini (cut into “noodles”)
  • lots of mushrooms, sliced
  • 1 Roma tomato, diced
  • olive oil
  • white wine
  • kosher salt, dried basil, parsley and oregano to flavor
  • a pinch of cornstarch to thicken the sauce a touch

Very gourmet for a thrown together lunch, yes?

I have learned it is easy eating vegan. I tell people all the time, but I have to say it again. Being vegan is fun and easy! I’m an easy vegan. I like relying on fresh foods and simple flavors. I don’t think I’ve eaten as many creative and flavorful meals as I have since going vegan.

I have learned that I love supporting my friends to help us all achieve the same goal. :) On that note:

    I did the same thing at the grocery store this week! I figured I’d stock up at the Farmer’s Market this Saturday, but didn’t buy enough to get me through until then :(

    I need to try putting more nut butters in my oats. I’m always afraid of calories. I learned today that I need to eat more on hard days, even if they don’t contain any kind of cardio workout.

    I think I’ll buy almond butter this weekend so I can add it to my oats, at least. Fats (even if they’re healthy) still scare me a little but I’m slowly making the transition. :P

    I go through veggies WAY too fast! That dish looks fantastic – how did you cut the zucchini noodles so small?

    Lindsay are you the creator of the Vegan Choco Oat Pumpkin cookies I saw on Sarah’s blog??!! If you are, you HAVE to hook me up with your recipe! I am a high raw, all vegan girl. I also don’t do gluten but I can sub out if you used wheat flour. They look so moist and perfect, major props my dear!!!!!!
