Three Ingredient Dinner

Tonight’s dinner is a perfect example of an easy vegan meal. In fact, I would like to make a suggestion: if you have ever thought about making a vegan meal, try this. “Spaghetti and Meat Sauce” – vegan and vegetable-lover style.

Three Ingredient Dinner:

  • spaghetti squash
  • jar of tomato sauce
  • package of tempeh

Three steps:

  1. Cook spaghetti squash.*
  2. Crumble tempeh into a skillet.
  3. Pour sauce over tempeh and simmer 10-15 minutes.

Done.

*If you’ve never cooked spaghetti squash, don’t be scared, it’s easy! Use a large knife to cut your squash in half. Scoop out the seeds and then microwave or roast the squash until it is tender and the squash breaks into strands (“spaghetti”) with a fork.

I really prefer spaghetti squash over regular spaghetti because like I’ve said before – I’m a volume eater. You can eat three to four times the amount of spaghetti squash as compared to pasta for the same number of calories. And you get more vegetables in! However, you may want to make some regular spaghetti for any skeptic males in your life. They may appreciate this vegan meal a little more then. ;)

There you have it. Easy peasy vegan spaghetti and “meat” sauce.

    i was totally going to make my spaghetti squash tonight to have w/ my snobby joes, but the whole things went bad. wtf? i just bought it last weekend?!?!? so pissed…5 bucks down the stink’n drain; 5 bucks i totally could ahve used on something else! arg!

      So weird, the spaghetti squash I bought before this one (from a different store) was completely ROTTEN when I went to use it a couple weeks ago. And usually I can leave squash on the counter forever! This squash looked normal on the outside, but when I picked it up it collapsed like a balloon and burst. Disgusting. I hate throwing money down the drain like that, but I mean what else are you going to do when produce goes bad way too quickly?

    LOVE spaghetti squash! Need to reintroduce that to my life once I have a kitchen again.. Or I could attempt the micro preparation–but I just envision it exploding everywhere haha

    I really have to try that spaghetti squash. :) That’s a nice and simple recipe (totally my fav kind of recipe!).
