Hey friends! I had quite an enjoyable day today! Since I last saw you I had a pretty good workout at the gym. I don’t remember everything because I didn’t write it down, but here’s what I do remember:
- 30 minutes elliptical, resistance 5 (going forwards and backwards)
- seated row, 50 lbs, 3 sets of 10 reps
- butterfly, 25 lbs, 3 sets of 12 reps
- shoulder press, 20 lbs, 3 sets of 10 reps
- biceps, 30 lbs, 3 sets of 10 reps
- chest press, 50 lbs, 3 sets of 12 reps
- tricep press, 50 lbs, 3 sets of 12 reps
- lat pull down, 70 lbs, 2 sets of 10 reps
- decline crunches, 100
- stair master, 10 minutes (varying resistances and speeds)
Not bad! Once cleaned up we headed out for a few errands. We soon realized that we would not be able to wait until dinner so Ross and I split this package of brown rice vegetable sushi from Fresh Market. Delicious!

I must add that despite church this morning, I think something evil got in my system. Although he’s had sushi before, Ross has never tried wasabi. I told him to try the green stuff and said it was just avocado. The poor dude believed me and I got one heck of a laugh. Ahh, marriage and true love.
Once home from errands I sipped on a cocktail while making dinner. POM Wonderful pomegranate nectarine juice with a splash of champagne. Wonderful! The only sad thing is that now the pomegranate nectarine juice is gone and the champagne is gone.

Dinner was vegan meatloaf (needs tweaking before I can share the recipe), vegan mashed potatoes (potatoes, almond milk, EVOO, kosher salt, garlic powder) and roasted asparagus.

I honestly would have been completely content with just asparagus and mashed potatoes.
I’m a bit nerve-wracked for the coming week, so I took my nerves out in the kitchen making some brownies that I found from this recipe. I didn’t alter the recipe (besides using whole wheat pastry flour because that’s all I had, and added chocolate chips), because I just didn’t feel like thinking about it. They’re still in the oven, but I really hope they’re enjoyable!
