Hey hey pretty ladies (and gents)! I’ve missed you! While having this morning’s and afternoon’s posts scheduled ahead of time was wonderfully freeing for my schedule today, it felt strange not posting. What do you think of this week’s BSI of dried fruit? There’s already one entry that looks pretty fabulous – I really look forward to receiving many entries this week!
Breakfast was a green smoothie in a bowl (spinach, almond milk, ice, frozen mango, frozen blueberries, brown rice protein powder) topped with some crack Quaker Oatmeal Squares.

Lunch was a sandwich with some leftover “meatloaf” from last night, leftover guac, carrots, zucchini and mustard on a slice of sourdough bread (I love a good sourdough bread!). It got a little well done, whoops! (This is why one should not tweet while waiting for their sandwich to get done lol).

I have to give a major shout out to one of my favorite companies of all time – POM Wonderful. They sent me a little container of spice mix (that smells divine!) to make some Spiced POM Cider. I am saving this for the holidays and I can’t wait to try it! Thank you so much, POM!

Dinner tonight was a complete hodge podge thrown together last minute, but goes to show that you by no means have to do anything fancy to eat vegan. I had some leftover mashed potatoes with a quick stir fry of leftover spaghetti squash, zucchini, red bell pepper, chickpeas, arugula, white wine, garlic powder, paprika and soy ginger sauce.

I cannot even express how badly I want to get into the top 20 and have a shot at this, so please – keep it up friends!
