I’m going to breeze through lunch and dinner to get to some general housekeeping notes and a couple special, big news announcements! My impatience got the best of me and I can’t bear to wait any longer to share.
Lunch was leftover Amy’s roasted veggie/ no cheese pizza with a bunch of grapes.

Dinner was a ratatouille-esque meal. I roasted eggplant, baby bella mushrooms, tomato, asparagus, chickpeas and garlic in extra virgin olive oil, balsamic vinegar, white wine, kosher salt and herbes de provence. I adore herbes de provence! One of my favorite seasonings! (I got mine at Whole Foods). I also made some roasted potatoes (potato, kosher salt, extra virgin olive oil, herbes de provence) on the side.

I could not believe how much Ross enjoyed this simple roasted ratatouille! He even suggested I make it as a side for Thanksgiving! I actually made the potatoes specifically for him in case he wanted more substance, but I didn’t hear a word about the potatoes. Men – they never cease to surprise you.
After dinner I attacked my first pomegranate of the season. I was so excited as each gem-like aril fell from the pomegranate! They are one of my favorite fruits ever.

Ok, now for some housekeeping and random notes (I apologize for being all over the map tonight).
- I’m thrilled at the response of my Give and Feel Good Challenge! Amanda asked if I had seen the woman who swears she healed herself of MS by starting to give everyday to others. Not sure what she was talking about, I googled. Cami Walker is the author of 29 Days. Here’s a clip from when she appeared on the Today show:

Guess what (this is so crazy) — there are 29 days until Thanksgiving! What a fun coincidence!
- For my intentional giving today, I cleaned the kitchen. This may not sound like much, but Ross and I have been so busy lately that dishes have been piling up and would just stress the both of us out every evening. So today after the gym I cleaned, washed, scrubbed, swept and more! Just for hubby.
- Workout today: 20 minutes stair master, arm strength machines, 25 minutes elliptical. (ask if you want more details).
- Don’t forget to get your BSI Dried Fruit submissions in by Sunday!

And THANK YOU so much for posting this MS story – my father was diagnosed about 15 years ago and is pretty much a walking miracle as he is today – healthy and living with the disease which for so long we didn’t know would be possible. This topic really holds a special place in my heart and I would love to read her book as well, thanks again.
