You have probably noticed that lately, particularly for lunch, I throw a bunch of vegetables in a pan, cook them a bit and call it a stir fry. It is so easy and has completely become my convenience food. I really love loading up on vegetables at lunch. This way if I want something like sushi and wine for dinner, I can have it without worrying that I am low on my veggie-quota for the day. Plus, change up the herbs, spices, and sauces a tad and you have competely different meals.

For today’s easy lunch I threw a medium-small zucchini, 4 bella mushrooms, half a bunch of asparagus and a handful of chickpeas together with some extra virgin olive oil, kosher salt and herbes de provence.

Volume eating at it’s finest. :) It’s basically a warm, leaf-less salad.

I wanted to elaborate a tad on my current favorite seasoning, herbes de provence. I purchased this one at Whole Foods.

It contains savory, thyme, rosemary, basil, tarragon and lavender flowers. I think my favorite is the lavender flowers because it just seems so beautiful, girly, exotic and French!

Can you see the lavender flowers?

I tell ya, it’s the little things in life that put a smile on my face. :) What’s your favorite seasoning blend?

It’s been a lovely “lunch break” but now I must get back to my to do list! Why is it that days fly by when you have a a good amount of stuff to get done? Must get everything done before Ross gets home and we leave for Sarasota!

I am all about the Italian seasonings. It reminds me of everything my dad makes. I love stir-fry too. I could seriously eat if for lunch and dinner every single day.

I’m a weirdo and always hesitate to add spice to recipes because the only one I really like is garlic. I like rosemary in theory, but just because it smells good and it’s pretty. Not to crazy about the taste. Your veggies look delish though :)

I’ve never tried Herbs de Provence, but it sounds like an excellent combination! I add red chili flakes to almost everything :)
