Family Dinner

I am so glad that Ross and I went down to Sarasota to spend the weekend with my parents. It was fun, relaxing and incredibly enjoyable. Now I just need the seven (!!) weeks until Christmas to fly by until I can see them again!

Dinner tonight was family style. While my family enjoyed BBQ ribs and chicken, I made myself some BBQ tofu. As I tweeted, I wasn’t sure if many people have grilled tofu/ how one would go about doing it. What I ended up doing with simply placing my light extra firm tofu slices directly on the grill and as I occasionally flipped, I brushed each side with a barbeque sauce. Easy! (I only ate 2 out of the 3 slices)

Along with one of these delicious rolls made from some whole wheat/ whole grain bread dough from Publix.

After dinner Ross and I had to head back to Gainesville. It was a long and boring drive, which while a blessing that it was uneventful, made for a rough ride for Ross since I was making up my own songs as he drove along. ;) Once in and unloaded we dug into a special vegan dessert my mom and sent home with us. She said its her entry into “that dried fruit contest!”. Puff pastry (vegan) with apples, lemon juice, vegan butter, brown sugar, golden raisins, and dried cranberries inside, topped with cinnamon and raw crystal sugar. It was so good mom, Ross and I loved it! Thank you!

Alright, well this time change makes it feel much later than it is (well, an hour than it is), so I’m heading to bed. One week from now I’ll be getting ready to start my new job (eek!).

    7 weeks to Christmas is kind of scary! I have so much going on between now and then. Yikes!

    That vegan dried fruit dessert your mom made looks spectacular!
