Spread the Love

Today I did one of those things I don’t like to do. I ditched a work out. I have no excuse. I was lazy during the day today and was waiting for Ross to get home to go to the gym together. Once home, we opted to clean our home over hitting up the gym. While cleaning does burn calories it’s not quite sweat inducing as I like. Good thing there is always tomorrow! Cleaning was good, and necessary, since we’ll be out of town again this weekend.

Thrown together while cleaning, dinner was simple and also clean.:)

  • Roasted potatoes (white potato, herbes de provence, kosher salt, paprika, mist of extra virgin olive oil)
  • Green beans (steamed ala microwave — place them in a bowl with a bit of water, cover with saran wrap and microwave 3-4 minutes).
  • Honey Mustard Tofu (sliced extra firm light tofu, pressed, marinated in honey mustard dressing and cooked in a nonstick skillet)

The honey mustard dressing that I used was this Annie’s dressing. I know honey is usually not part of a vegan diet, but I’ve said before that it’s not as big of a deal to me, especially in a product like this that I’ve had for ages and would rather use up over throw out. (However I generally prefer to use raw agave over honey).

Now we’re running some laundry (oh joy) while Law and Order SVU is on. Any other fans of the show? I also have a batch of these vegan oatmeal chocolate chip cookies in the oven because my husband is awesome. That and his coworkers deserve to know vegan goods can be equally awesome!

Also – I realized earlier today that I haven’t been updating you on my Give and Feel Good Challenge! Here are some things I’ve done over the past weekend and week:

  • picked up a pizza for my parents and Ross (non-vegan pizza never smelled so good!)
  • rented a movie to watch while in Sarasota
  • held a door for an elderly man with a walker
  • bought Ross a package of peanut butter M&Ms in post-Halloween sales (a favorite candy of his, and mine pre-vegan days!)
  • left a penny heads up in the dressing room at Target for someone to find and have a good luck ;)
  • disinfected all the machines and equipment at the gym
  • made cookies for my hubby and his coworkers :)
  • spread the love and encouragement to an old friend going through a rough time trying to find a job
  • make Ross’ lunch for tomorrow (doing this right after this post!)

    ha, your dinner looks like mine! We call out roasted potatoes “happy potatoes” becuse they laugh (sizzle) in the oven..we use a garlic glove, olive oil and salt and pepper on our….YUM YUM. Tho instead of tofu we fixed a pork tenderloin, but didn’t eat it….. mostly b/c it smelled funny. EW. I’m getting close to not eating meat… just b/c our publix here is janky…plus its gross. I hate washing chicken. YUCK. Nice things? Bought a co-worker starbucks, met my bf for a needed chat during work, made him breakfast last sunday and cleaned our home so it was nice and cozy.

      Yeah…meat is gross. (coughGOVEGANcough). :D Love all the nice things you’ve been doing friend…speaking of starbucks, we should grab some in SRQ over Christmas break. if you’ll be there. :)

    Thanks for the comment on my blog :) I am not really sure where I stand on the honey thing actually! I too am like you and would choose wheat with honey over white bread.

    You’ve had me cravin potatoes like woah lately!

    Your challenge has been great. I admit I’ve been slacking a bit due to my man drama, but I’m going to get back on track immediately!!

    I’ve done a few things though. I called my mom and offered to stay with her over Christmas (my parents are divorced and she has little family so she gets sad over the holidays) and I could tell it really brightened her day. I offered to make Thanksgiving breakfast at my Dad’s house. I helped a friend through a fight with her boyfriend, too.

    I threw away what was left of a huge bag of peanut M&Ms just a couple of days ago because I was eating ENTIRELY too many of them. But they were so good, and cute: PINK KOMEN FOR THE CURE M&MS!!! Did they taste better cause they were pink?? Of course! ;-)

    You are such an amazing wife…making cookies for your hubby. I hope he relizes what a prize you are! :-)

    I’m totally loving this challenge, and have done lots of little random acts of kindness/volunteering!

    Next up? Gifting friends with homemade cookies to get through midterms. And to get rid of all the cookies I am baking to test recipes for the wedding. Its a win-win! ;)

    How’d you like the honey mustard tofu?? I have that exact annie’s dressing at home and am obsessed with anything tofu, so i’ll have to try that recipe out over thanksgiving break :)
