Early Morning Baker

Happy Friday morning!! I started my morning fairly early, and since I couldn’t fall asleep I figured I may as well get started on my busy day. We’re headed to Orlando this weekend and I feel like I have a lot to do to get prepared! Currently I’ve already been to Publix and the birthday cake (vegan funfetti) for my father-in-law is baking away! Not bad for all before 8 AM! (The cake I’m making is this vegan vanilla white cake that I added two packages of star sprinkles to, and I’m planning on making this vegan buttercream frosting to go with it)

As I’m posting I’m muching on this honeycrisp apple with natural PB and cinnamon. Easy, light breakfast that’s great before the gym.

Up next: hill walking at the gym while the cake cools, then making the icing and decorating the cake, baking some treats for some Orlando friends, clean up the disaster my kitchen will be afterwards, pack, and tidy up!

Vegan Tip: Did you know that most Duncan Hines cake mixes (and I believe brownie mixes too) are vegan? As long as you add an egg substitute instead of eggs, this could be a fast way to make a dessert over the holidays. You could try making my Easy Pumpkin Spice Cake with a box of Duncan Hines spice cake mix, a can of pumpkin puree and the water called for on the cake mix package.

Edit to Add: Upon further investigation, not all DH cake mixes are vegan. I took the time to look them all up and list them out for you, hope it helps.

Vegan: Butter Recipe Fudge, Butter Recipe Golden, Classic Yellow, Coconut Supreme, Dark Chocolate Fudge, Decadent Carrot Cake, Devil’s Food, Fudge Marble, German Chocolate, Lemon Supreme, Pineapple Supreme, Red Velvet, Spice, Swiss Chocolate

Not Vegan: Angel Food (obviously lol), Banana Supreme, Caramel, Classic White, Confetti Cupcake, French Vanilla, Orange Supreme, Strawberry Supreme, Tres Leche (another obviously)

Most importantly, just read the labels! Or just make a cake from scratch – it’ll take a little longer but knowing exactly what’s in your cake and having fewer ingredients is awesome. :)

    Oh darn, not all of them are. My best friend always makes me strawberry cupcakes for my birthday using a mix and she was already worrying about how to make them next year since I’ve gone vegan. I just checked and the DH strawberry mix’s last ingredient is Nonfat Dry Milk :( I may just have to pick another flavor.

      Oh thanks, I’ll be sure to update. I know I checked a chocolate cake mix, spice cake mix and a brownie mix (all I had time to check at the store). Someone had told me they were all vegan, so I’ll be sure to edit the post to say that for certain the strawberry are not vegan.

      You can make strawberry cupcakes from scratch! I don’t think it would be too hard and would probably taste 1,000 times better because food from scratch always tastes better. You know, that secret ingredient of “love”. ;)

    I had no idea that most of the DH cake mixes were vegan. While I’m not vegan and usually bake from scratch, I’ve been known to use a cake mix every now and then. Sometimes convenience is imperative.
    Your vegan funfetti cake sounds yummy; I love buttercream!

    It’s a baking day at my house, too. A pumpkin cake for my husband’s co worker’s last day plus gingerbread blondies and double chocolate chunk cookies for a bake sale.

    Wow, I had no idea that many of the boxed cake mixes were vegan! That’s good to know. Sounds like you have had a busy morning. Quite brave, doing all this baking as you are preparing to leave on a little trip! And if something HAS to go, make it cleaning the kitchen…the crusty dishes can always wait! ;-) LOL
