Roasted

What a day! Sorry for the delay in posting, I got caught up in watching the Orlando Shooting breaking news on CNN (and following along with #orlando on twitter). Yikes! Praying for those involved, I really hope they apprehend the shooter soon. :(

Today has been productive though. Got in a great 30 minute hill walking workout this morning (4.0mph, interval hills at incline grade 5-13, mostly grade 10).

Here’s a glimpse at the vegan funfetti cake fresh out of the oven – I can’t wait to cut inside, I have a feeling it will be one colorful party!

I think a lot of people are unfamiliar with flax eggs, which are a great vegan egg substitute when baking. All you do is combine 1 Tablespoon ground flax seed with 3 Tablespoons water. I like to stir it up to get all the flax surrounded by the water. If you stick your finger in the mixture at this point, it feels like water.

Wait a few minutes and the mixture should be rather congealed at this point. You can kind of see that the flax looks like it has expanded and plumped up in the below picture. If you stick your finger in it at this point the mixture will feel much thicker.

Lunch was rather roasted. I had a small/ medium white potato, chopped up and roasted, as well as some asparagus and half a zucchini also roasted. For a bit of protein I also had a bit of nonfat refried beans.

I feel like I’ve been featuring roasted potatoes a lot on the blog lately – they’re tasty, for one, but I had also just bought a 5 pound bag of white potatoes for $1.99 at Publix. Florida isn’t the most conducive for storing potatoes – they need dry, cool environments and well, that’s pretty much the opposite of Florida. My potatoes had been starting to sprout and such, so I’ve been working at getting throuh the bag asap! Only two more left, thank goodness. :)

Alright, I’m off to go get a few more things done, maybe get in another workout, and keep an eye on everything with the Orlando shooting!.

    I don’t think I’ve seen a cake like that before but it’s definitely fun! I’m not vegan but flax “eggs” are so handy because I rarely have eggs on hand.

    My condo complex is across the street from that office building! I stayed home from work today with the flu and couldn’t believe this hoopla was going on outside our windows. Scary stuff!

    The funfetti cake came out awesome!

    I am all about the cheap good eats. Why are potatoes labled the “poor mans food.” I go CRAZY that yams are only pennies a pound right now. I can’t get enough of them and you can totaly make them so elegant and indulgent.

    I just switched to vegan and I can not stay full! I’m starving a of the time. I don’t want to rely on processed foods to survive (and lately Luna bars have been my godsend. Can’t wait to see the yummy cake inside.
