It’s official – I work! First day went well – lots of orienting myself to the job. I am so grateful that the current program assistant will be there to help me adjust the next two weeks. Lots to learn! It is really a great job though.
One problem: I need to learn how to eat with my new Monday and Thursday schedule! I tried to eat breakfast much earlier than I usually do (around 6:30) – I only ended up eating 1/2 -2/3 of the oatmeal shown this morning, I just wasn’t hungry. Then the smoothie in a bowl for “lunch” 10:30-11:00. I didn’t get home until 8:00. I managed to nibble on about 2/3 of a clif bar throughout the clinic hours, but man…headache! After today I have a better idea of what to expect though, so I definitely can tell when would be a good time(s) for a “mini meal”/ “large snack” break.
I was so thankful that dinner was ready and waiting for me! Praise God for crock pots.
I threw together a pot of my awesome Vegan Three Bean Chili. It was just as good this time as it was last! Can’t wait for leftovers!

I wanted to share a trick I learned from the Food Network a while ago. Does anyone else ever have to throw away part of a can of tomato paste because they can’t use it all before it goes bad? Well I saw this trick on the Food Network (don’t remember which show!). Open both ends of the can. Leave the bottom circle of tin on and push it up (like one of those push pops!).


Then you can wrap it in saran wrap, but it in a baggie and freeze it! Then just keep pushing out whatever you need.
Alright, well it’s time for bed. And to figure out what to do about my sneaker situation.
I think I’m going to just have to go out and buy new shoes tomorrow/ ASAP. I’m a little annoyed because I don’t want to feel rushed to find a good shoe, and I know that to find a good shoe for a bargain will be even harder under the time crunch. We’ll see! Regardless, I’ll make the best of it.
