Good morning and Happy Veteran’s Day! With my sister-in-law Jordan here, I figured the perfect breakfast to please all palates was a pot of oats. I made one giant batch of oats (1.5 cups each of oats, light vanilla soymilk, and water, plus cinnamon and a mashed banana whipped in). I gave about half the oats to Ross and then some to Jordan and then the rest I finished cooking with a bit of pumpkin for myself. Three oats in a row:

Jordan’s had a spoonful of peanut butter, chocolate chips and mini meringues:

Ross’ had raisins, leftover cinnamon roasted pears, chocolate chips, freeze dried strawberries and mini meringues:

And mine had pumpkin, goji berries and pumpkin seeds (and I may have had a few chocolate chips on the side
):

Delicious! It looks like it’s going to be a pretty easy day over here. We may go out to grab something for lunch and later this afternoon Ross and I are going sneaker shopping.

oh yum! where did you find those mini meringues? those look so good
I found them awhile ago at Trader Joe’s when I was in Atlanta. Like all meringues, they’re not vegan though (contain egg whites – which is why my hubs and SIL had them and I did not).
