Hey! Tonight’s work event went well – since I’m still in orientation mode Ross and I were simply attendees (which is a shame, because you all know how I love to be in on the behind the scenes of events!). I only have around two coworkers so tonight was more of a meeting of other volunteers and mingling (aka schmoozing?). Unfortunately there was zero vegan friendly food, so Ross and I headed home after the speakers for a veg-friendly dinner. Spinach with nonfat refried beans, a quarter of an avocado, salsa and crumbled tortilla chips.
An easy salad, perfect for a fast and nutritious dinner.
Currently Ross is testing out my final chocolate chip cookie recipe. I have learned that the ultimate fool-proof test is if you have someone else make the cookies (especially if it’s a guy!) and they turn out exactly the same.

Hey girl! Glad the work event went well. I think you may have mentioned this, but is Ross vegan too? I never really picked up on it but that’s so cool if you guys are able to live this same kind of lifestyle. I bet it makes cooking and shopping so much easier!

Ross is not vegan, but he eats a lot of vegan meals with me. Last night he didn’t eat because he’s not a fan of sushi with fish and also didn’t want to eat if I couldn’t (I know, right?).
