You know you are a veggie-focused vegan when asking for seconds you ask, “Do we have any more veggies?” I don’t think years ago I would have ever been able to believe you if you told me a day would come where I would rather have a second serving of vegetables instead of a sweet dessert.
Tonight’s dinner was rather lack-luster, as I had already been spending a bit of time in the kitchen this afternoon working on a vegan flaky pie crust (with whole wheat pastry flour) and a vegan pumpkin pie. I’m nervous about the recipes, but once the pie has set and we’ve sampled it, I’ll be sure to share the recipes! Because of the abundance of dishes my baking extravaganza produced, I wanted simple for dinner. Enter: veggies! I sauteed a large zucchini, a tomato, and a package of baby bella mushrooms with a sprinkle of kosher salt and extra virgin olive oil. I served my half in a tortilla with a quarter of an avocado smashed inside.
After trying to eat the burrito I realized that I just did not want the tortilla. So I just ate the glorious vegetables inside.
Upon finishin I asked, “Do we have any more veggies?”. Time to stock up on vegetables tomorrow!
What are your weekend plans? We have all sorts of ideas tossed around. There’s an arts festival in downtown Gainesville tomorrow that we may hit up, as well as a couple farmer’s markets on our radar, and another state park we’ve thought of hiking. It’s our last weekend here until December, so we’re going to live it up, have fun and get some relaxing in, too.


So agree – I had these amazing roasted brussel sprouts today and pretty much made them lunch!
Those veggies look so tasty! I’ve been craving veggies in the mornings lately and reading your post makes me wonder if I have any in the house!
