Baking Blondie

I have decided I should make a new blog and call it “The Baking Blondie”. I feel like I’m on a baking rampage lately! Our freezer is getting full, Ross’ coworkers will be happy tomorrow, and once I make the final touches, you should have several vegan recipes coming at you just in time for the holidays. :)

This afternoon I didn’t really have lunch – all I was hungry for was a bit of the Publix hummus I found yesterday and some Stacy’s multigrain pita chips. This Publix hummus is so good. I don’t care if I’m fuming garlic afterwards, I love garlic and I love this hummus! I’m going to have to get more, and soon. (No picture of the snack, because I was lazy – no excuse!).

After a quick trip to Walmart I was hit with terrible cramps and back pain, so I cancelled my planned run and instead curled up in a ball on my bed. I was ticked to cancel my run, but honestly at the time I was in no condition to do anything (I couldn’t even stand straight). A big part of a healthy lifestyle is listening to your body and knowing yourself, so I honored what my body was shouting telling me today.

In addition to cancelling my run, I listened to the other thing my body was whispering to me: “sweet potato fries”. We’ve had two large sweet potatoes on the counter for a week, and tonight all I wanted for dinner was sweet potato fries. That’s it. So taking a cue from Katy, I prepped and baked my sweet potato fries the following way:

  • Misted with EVOO
  • sprinkled with kosher salt, paprika, chili powder and cinnamon (just a tiny bit on the last three)
  • Baked on a foil-covered cookie sheet, 20 minutes at 375 and 10 minutes at 325.
  • I then broiled a few more minutes to see if I could get it crisped up a bit more.
  • Devour! ;)

Definitely not the most balanced of meals, but hey – it’s a sweet potato and it’s all I wanted. It could have been far worse!

Now it’s time to see how my vegan pumpkin pie round two is going. I broke the cardinal rule of baking tonight – I failed to verify I had all the ingredients before I started to bake. Whoops! Who needs pumpkin to make pumpkin pie? ;) (Luckily we live right next door to a grocery store and canned pumpkin was a mere five minute walk away – thank you Ross!).

P.S. Anyone watching The Next Iron Chef? Who are you pulling for? Ross really wants Mullen or Garces to win. I’m undecided. ;)

    Sorry about your cramps :( Sweet potatoes rock! That’s a great tip to use the broiler fora few minutes!

    SOrry to hear about the crumy cramps! Me too girl, me too! :(

    mmm, sometimes, a big plate of sweet potato fries for din is all I really want too! No shame. Frist, they are totally healthy and second, how freaking delicious! :)

    I have not made sweet potato fries yet, but I’m dying to! They look so good! And kudos for listening to your body. I need to do that better. I find that sometimes I will push my body to “go” just because “go” is what’s on my schedule. And sometimes it just wants to “stop.” Good job.

    I haven’t watched any of the Next Iron Chef. I am addicted to Top Chef! I hope Kevin wins it all!!
