Definitely a Monday

I’m definitely having a case of the Mondays over here! Ways today has been your standard “Monday”:

  • I woke up with an awful headache and tension in my back, neck and shoulders. Me thinks I slept funky.
  • My “run” was a complete flop. I only plodded jogged 15 out of 45 minutes and felt awful the whole time – I had to turn back to stop at a grocery store bathroom, my feet felt like they had 20-pound weights attached and I just felt heavy and blah.
  • I sliced of part of my pinky when I was using the mandolin slicer. I always do this! Note to self: do not be in a rush when you use the mandolin slicer!
  • Windows Live Writer was crapping out on me so now I’m having to throw this post up old-school style and then run out the door to work!

Ways this Monday has been stellar:

Breakfast! Leftover pumpkin pancakes.

Lunch was delicious sweet potato fries, zucchini chips (totally not chip-like):

My last pumpkin pie recipe was kick-a$$. Seriously. After the photo shoot with my pie, I had this bite (times two) and oh my gosh. I had to shove the rest of the slice back into the pie and throw in back in the fridge. I cannot wait to come home after work to finish this slice!

I have to publish this post and get out of the house, stat. Just looking at the picture is making me want to run back into the kitchen and grab that beautiful vegan pie out of the fridge!

    Huge reason I’m afraid to use a mandolin – cutting all of my fingers.

    no run is ever a fail. the fact is you got out there and tried and got in a good 15 minutes. thats great! p.s. dont feel bad about the mandoline slicer lol, i burn myself on my hair straightener at least 2 times a day :)

    Ugh I have had a few mini breakdowns, but met THE BLOGGER. So that is an up. I can’t wait to hear the recipe on the pie I KNOW I want a vegan pie for Thanksgiving to eat. I refuse to miss out again.

    Oh no! I hate a case of the Mondays. Sorry you’ve been down on your luck today, but don’t worry, tomorrow is going to be so much better! I promise.

    So at least you have a killer peice of pumpkin pie to come home to tonight, if nothing else was worth it today, the pie was!!! :)

    I’ll be praying that tomorrow is so much better darling.
