I am so glad you guys are having as much fun with the “confessions of SE” as I am. It was a blast to come home from work and see a plethora of comments! They will definitely continue to (at least) be a weekly event – the trend is Tuesday mornings, so may as well stick with it! Tuesdays need something special about them, besides the day that means Monday is over.
Anyway, sorry for the late post, it’s been a busy day! I worked a little longer than anticipated at work and kind of just vegged when I got home. I’ve been feeling so off all week. Good news is I have off tomorrow! Totally fine, because I worked extra today and have plenty to get done before this weekend!
Lunch today was rather random. I wasn’t expecting a “lunch break” because I was expecting a shorter work day, so I ended up driving home to quickly blend a green smoothie and then turn right back around and rush back to work. Not ideal, but it won’t be a regular occurrence. I actually ended up getting back before the gal with the keys got back, so I had some time to sit on a park bench and admire the beautiful day!
My smoothie contained plain almond milk, spinach, frozen mango, frozen blueberries, chocolate brown rice protein powder, ice and some granola on my leftovers that wouldn’t fit in the mug.
Dinner was easy and quickly thrown together. Vegetarian (vegan) baked beans (from a can!), roasted zucchini and polenta – yes that white pile that looks like mashed potatoes is actually polenta. Apparently I grabbed a bag of white cornmeal, oh well.
It was easy (and boring) but sufficient! Now it’s time to get a good night’s sleep, I have a lot on the agenda tomorrow:
- Make the apartment spotless because my sister is coming this weekend!
- Make some vegan brownies for a recipe contest and to bring to Orlando on Friday for girl’s day and the New Moon sleepover!!!!!
- Workout. I’m in need of a huge sweat session. I didn’t work out today and an off day always makes me want to push it even more the next day.
- Finalize my contributions for Thanksgiving with Ross’ family.
- Figure out my general “plan of attack” and other foods I’ll bring for my vegan, nut-free venture in the deep south over Thanksgiving weekend.
- Finish and send out my Christmas wish list – so sorry I haven’t done this yet, family members!
- Publish my vegan pumpkin pie recipe for you all tomorrow!
- Send out a package.
- Whatever else comes up!
Whew, busy day tomorrow and busy weekend coming up! I’m so excited! How many of you out there are heading to see New Moon this weekend? And more importantly – Team Edward or Team Jacob? TEAM EDWARD ALL THE WAY!!!!

I am excited to see the recipe tomorrow! I am also vegan, and looking for ideas! We are lucky enough to host Thanksgiving and Christmas this year (so we can make vegan food) but we are still working on our menu.

Wouldn’t it be neat if everyone could go home and have a relaxing lunch mid work day! I would love that. Too bad I work 50 miles from home!
