Who’s Going Vegan?

Good evening! I know many of you will be attempting Vegan 4 a Day tomorrow, so this post is dedicated to you all and to share today’s very easy lunch and dinner.

Lunch was a simple can of Progresso Lentil Soup. I love this soup, although for some reason today it tasted much saltier than normal (not a fan!).

DSC_3066 I also had some sourdough “croutons” on the side. We have some sourdough bread that was definitely at the day old state, so I chunked it up and toasted it in a nonstick skillet. There’s something so much more special and comforting about toasted bread, anyone with me?

Now dinner tonight was so deliciously satisfying while simultaneously so vegan and so easy! I began by roasting some vegetables (eggplant, red bell pepper, grape tomatoes sprinkled with garlic powder and oregano) and also some kabocha squash (misted with extra virgin olive oil and sprinkled with kosher salt). I served some roasted veggies on top of a bed of field greens and added a serving of light firm tofu (cooked in a nonstick skillet), a quarter of an avocado and a dressing of a balsamic-pomegranate-agave reduction. So delicious! I served it with a glass of half POM juice and half seltzer water.

This was such a delicious salad with the depth of flavor from the roasted veggies, the chewy tofu, the creamy avocado and kabocha, the crisp greens and the rich reduction. I could eat salads like this all the time!

    I’ve been vegan all week as far as I know, and I definitely plan to take part in tomorrow’s festivities. I love that there’s so much more awareness now!

    love bug!

    I am attempting to go vegan for 1 week..tomorrow until thanksgiving (when I will resume my vegetarianism). I want to do this bc I think its important, especially around this time, to be thankful for things, and know what you are thankful for. I am thankful for my health, environment, family, friends! I really want to respect the things I am thankful for, such as animals and our surroundings, by giving going vegan, so I may in some small part help save an animal or two during these meat-heavy holiday days.

    questions:

    1.are z-bars and clif bars vegan?
    2.Do you eat anything that says in fine print “may be manufactured with soy, dairy, wheat products”??
    3.do you have a vegan stuffing thanksgiving dinner side recipe?
    4. what b-12 or Iron supplement do u use?

    im looking forward to see what people do also!
