We had an easy drive home from Alabama today, but that unfortunately means we’re back in Florida and I have to put my hoodie away again.
The cooler temps were wonderful while they lasted and further solidified my desire to move out of Florida! Due to not eating before we left and losing an hour in the time zone change, we stopped for a breakfast/ lunch combo at a 24-hour Subway. I got my standard Subway order: 6 inch veggie delight on honey oat with lettuce/ spinach, tomato, cucumber, green bell peppers, lots of black olives and a tiny line of honey mustard. (For some reason the lighting is very awkward and no matter how much I edit this photo it is so blue!)
Once back and unpacked and stocked with fresh groceries, I had a snack of generic brand raisin bran with soymilk in the first official Christmas-themed photo of the season!
What better seasonal mug for Sound Eats than a Christmas mug (favorite holiday!) with music notes and Charlie Brown, my husband’s favorite!
Since my entire Thanksgiving holiday was alcohol free (my in-laws don’t drink – I don’t even think they own wine glasses!) I decided it was ok to pick up a bottle of a cheap Merlot I found at the store since I very rarely drink and when I do it’s a minimal amount.
Do you see that blank spot in the Christmas tree in the second photo? There’s a burned light bulb somewhere in that section on our Christmas tree (fake, pre-lit) and we can’t find it!!
Dinner was fresh and perfectly Lindsey-friendly.
As much as I love the holidays, it’s good to be home. I made sweet potato fries (misted with olive oil and seasoned with kosher salt, cinnamon, paprika, chili powder and garlic powder) out of a large sweet potato and split them with Ross. I also had a salad with leftover Thanksgiving salad (greens, roasted chickpeas, pomegranate arils, pear and almonds) with some seared tofu on top.
So refreshingly delicious! (P.S. I totally didn’t eat dinner on my counter – just photographed here and ate on the couch since ornaments are strewn all over the table.)
After dinner Ross and I were jonesin’ for something sweet so I made a MILKSHAKE! It has been forever and a half since I’ve had a milkshake. Mine’s on the left, and I used a scoop of chocolate coconut milk ice cream, plain almond milk, ice cubes and a few chocolate chips (Ghiradelli semi sweet chocolate chips are vegan friendly). Further proof that nothing about a vegan diet is restrictive or lacking in the slightest. Ross’ milkshake is on the right and his had skim milk, strawberry sorbet, ice and chocolate chips.
On that note, I need to go rescue my husband from the evil tree and it’s hidden burnt light bulb (or maybe I need to rescue the tree? lol). Hopefully we’ll be able to decorate tomorrow night after I get off work so I can share pictures with you all soon!

Your shake looks delicious! I haven’t tried the Coconut “Ice Cream” yet but I’ve been dying to. And I plan to have a pumpkin loaf cooking while we put up our tree and indoor decorations tonight, yay, gotta have those yummy smells

I like decorating for Christmas but sometimes it’s hard to get started! My husband put the tree up and put the lights on it then a couple days later (ha ha) I put the ornaments on. Now everything looks nice and I’ve put out other decorations as well
