Ra Ra Ra-a-a-a

Mondays back after a long holiday weekend always go by so quickly! Work today was especially hectic because my other coworker (well, we work with volunteers, but she’s the only other “official” employee who gets paid) was out sick, plus this was only my second clinic night by myself/ not in training so yeah…crazy craze. Lucky for me I had the foresight to get my energy levels UP with a great combination of a workout, a filling healthy lunch and some energizing music!

Workout:

  • 2 miles (mostly jog, some walking)
  • strength training working biceps, chest, shoulders, triceps, thighs, quads, abs, hips

Lunch:

  • Repeat of last night’s dinner because it was so good and I could just feel the nutrients soaring through my body. ;)
    • Sweet Potato Fries (misted with EVOO and sprinkled with cinnamon, paprika, chili powder, kosher salt and garlic powder and baked at 425 for 20 minutes, 325 for 10 minutes and then broiled a few minutes while the tofu was finishing).
    • Salad leftover from Thanksgiving with seared tofu on top. YUM!

Energizing Music:

  • Radio!! It’s the good thing about having the office to myself most of the day in a pretty empty building. :D Songs included:
    • “I’ve Gotta Feeling” Black Eyed Pizzas (standard good vibes song!)
    • any Taylor Swift song (I love singing along!)
    • Lady Gaga! I wasn’t sure how I felt about her for a while, because honestly – she’s just weird. But I think I’ve figured out that I like love her! She really is very talented, I love her music, and hey – can’t fault a girl for self-expression. ;) Currently I’ve been singing “Bad Romance” all day and now all. night. long.

After work was over (YAY!) I came home to leftovers. Not the most well-rounded meal, but it had a vegetable in it…so it works, right? ;) It really wasn’t the most aesthetically pleasing either, but I promise it tastes amazing! I took leftover Thanksgiving garlic mashed potatoes and topped them with leftover vegan green bean casserole (recipe coming soon!!) and microwaved for three minutes on high. Served with a warmed roll and you have the perfect comfort-food dinner to end a very long, very tiring day. :)

Now I’m off to dance around the house and sing….”Ra Ra Ra-a-a-a, Roma Roma-ma, GaGa, Oh La La….” :D Sing it with me!

    That lunch looks amazing! I really want some of those sweet potato fries. Haha, I totally have that lady gaga song stuck in my head now :)

    omg funny that u were gonna do cheesecake too! and i used about half the liquid…(almond milk) and a ton ton of cinnamon and pumpkin pie spice..this made it soooooo flavorful! i also used a bit more silken tofu and mixed pumpkin pie filling with pure pumpkin. It was more of a “go with the flow” pie process but it all turned out great! the crust I made was graham craker too. I think that made it less scary for my family. I cant wait to try your other vegan dessert recipes!

    best new lady gaga song is telephone w/ beyonce…dl’d it onto my ipod today, and couldn’t stop listening to it all the way up to sacramento!

    Mmmm, your lunch looks just as good as your dinner did. I am totally thinking that SP Fries and Salads make the perfect meal.

    Haha, Lady GaGa is definitely a bit “odd” to say the least, but her music is AWESOME to run to! Oh well, the weird ones make some pretty good music.

    Ah man, I just got that song out of my head and now it’s back! Ha ha. But I do enjoy her music, it definitely makes me move around when it’s on ;-)
