Slacker McSlackerton – someone just realized she hadn’t posted yet tonight! Lo siento muchachas – no excuse besides shear laziness. I don’t even have stellar meals to show you! Work breezed by and when I got home I didn’t really feel like lunch, so I munched on the last crumbs from the tortilla chip bag (mixed it with some salsa and ate it with a spoon!) and half a bagel later in the afternoon. Definitely carb centric, but I think we all have those days (ahem, ladies can I get an amen?). Plus it just shows that vegan diet or not, nothing is ever perfect.
I made up for it with a salad for dinner. Organic spinach topped with salsa, frozen corn, mushrooms, 1/4 of a small avocado, and some nonfat Whole Foods Refried Beans (flavored with lime and chili I believe).
Notes on the above photo:
1. It is really, really, really hard to make refried beans look like anything besides a pile of….well, something less than appetizing.
2. I know you’re supremely jealous of my leprechaun green sweat pants that I matched so expertly with the purple polo I wore to work today. I totally belonged on that Victoria Secret fashion show runway tonight.
I saw a fruity dessert on Michelle’s blog tonight that looked delicious so I gave it a try! Frozen blueberries, vanilla rice milk, vegan chocolate chips and a couple drops of agave.
I think my impatience to try it out kept the rice milk from getting as icy as it could have gotten, but it was still quite tasty! I kind of want a whole bowl of this for breakfast! Well, maybe just the berries and the purple rice milk.

ok..I might need to go back and say a bit less milk for you. just splash it over..sorry for mis-leading you. It is good though. They have to be super frozen and milk has to be cold.
I finished off the rest of the tortilla chips in my house yesterday too! That salad looks delicious but that dessert makes me cold (brrr…) as our “highs” are in the 40′s now
