My New Favorite Sandwich

So I made the most delicious and most simple sandwich ever today. So good I had it twice! I took the Rosemary Bread from Ward’s, spread a thick glob of hummus in between it and put a thin bit of Earth Balance on both sides of the bread. Toast. Be amazed. It’s seriously the grown up and vegan version of the classic grilled cheese. Except instead of processed cheese and chemical laden bread, you have delicious hummus and local, herb-infused bread. :)

I had my lunch with that smoothie you see up there…except it was kind of nasty. My blender is dying. It’s a 14-speed blender and I can’t go higher than speed 6 without it crapping out on me. So I only drank about half/ three-quarters before having to toss it (let’s just say things are getting entirely blended). I think I’m going to need a new blender for Christmas and I don’t think Santa can afford a VitaMix or a Blendtec. :( Any budget-friendly blender suggestions? (Or anyone want me to make them cookies for life in exchange for a Blendtec or Vitamix?) ;)

Work went well – exhausting, but I really like what I do. And we had some new women come tonight. Their reactions to what we’re doing were priceless and make all the “argh” moments worth it. :)

Dinner was a mish mosh. I had a salad (organic spinach, nonfat organic refried beans, avocado, zucchini, bell pepper, blue corn tortilla chip crumbs) and half a grilled hummus sandwich. I told you it was so good I had it twice!

DSC_3747 Want to know a secret? The other side of that sandwich was pitch black. It took like 6 minutes for the visible side to get that color and it took 6 seconds for the other side to char. Ridiculous! Totally got the knife scraper out on that one. Just goes to show that no one is perfect in the kitchen. :)

    Yes! Grilled hummus sammy? Brilliant!!! I love hummus so much, and never thought of doing this…I love when it is warm and gooey so this is right up my alley. Good luck on that list girl…I got tired just reading it! :>

    The magic bullet blender is awesome! And it’s PERFECT for making smoothies!! I’ve gone through 2 in about 5 years, and I use it at least 5x per week!

    Also that sammie looks AMAZING!! I never ever thought of that, my mouth always waters when the hunny has a grilled cheese sandwich!!

    BLENDER:: I have a Vita Mix, and of course it is the god of all blenders, however, when I went to college several years ago I did not want to take it so I got a Kitchen Aid one from Target and it works pretty darn well. I have not been disapointed with it yet. Target has the Kitchen Aid 5-Speed Polycarbonate Blender for only 99.99. It is a little pricey, but it works great, trust me!! I have used many other blenders, I am a kitchen appliance freak, and this is best bargain I’ve found. Hope this helps! Great blog by the way, would love to hear about how you are feeling with your weight issues you mentioned in some previous posts, you look beautiful to me!
