Chocolate 3 C Cookies

Rain, rain go away! But cool air, you’re welcome to remain here and stay! It has been incredibly rainy and chilly today. I love the chill – it definitely makes it feel more like December! Although it’s definitely not “cold” by any standards other than Floridian standards. The Connecticut-born girl in me was looking at the below picture wistfully, knowing that had it really been cold, this would have been frost.

Unfortunately the cool weather kept my productivity levels down all day. I official declare that today has been Slug Day. I did figure out one remedy though. I was able to get myself into the kitchen to clean by first baking a batch of cookies. Like how my brain works? ;)

I thought up this recipe a while ago but finally tested it out today. Chocolate 3 C Cookies.

  • 1 flax egg (1 Tablespoon ground flax, 3 Tablespoons water; let sit a few minutes)
  • 1/3 cup raw agave
  • 1/3 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup whole wheat flour (or white whole wheat, whole wheat pastry, etc.)
  • 2 cups old fashioned oats
  • 1 T special dark unsweetened cocoa powder
  • 1/4 cup vegan chocolate chips (I use Ghiradelli semi sweet chips)
  • 1/4 cup dried cranberries
  • 2 Tablespoons dried unsweetened coconut

Simply mix the dry ingredients into the wet ingredients and bake at 375 degrees Fahrenheit for 9 minutes. Easy and delicious!

Post cookie baking and post clean up, I broke out the snowmen to dine with over lunch.

Dinner tonight was as easy and convenient as it gets. We ran out and about (anybody ever say oot and aboot?) on some errands and just stopped at Fresh Market to get some sushi. I got the brown rice vegetarian sushi (it just has carrot, cucumber, avocado, seaweed and sushi rice). Fresh Market’s sushi is SO much better than Publix’s sushi.

Now we’re watching the last episode ever of Monk. It’s a show that Ross and I have enjoyed off and on over the years. A good wholesome show that’s been entertaining on these lazy Friday nights in. Crazy that it’s going to be over, but it’s one interesting (and conclusive!) season finale!

Anyone else out there ever watch Monk?

    Now I have the Sesame Street song stuck in my head! “C is for cookie, that’s good enough for me…” Don’t know why. Or why I even remember that song. Lol.

    Boo for rain, and even though I hate the cold, you are right, it really makes it feel like winter!

    The hubby likes Monk but I can’t seem to get into it. Not really sure why, but that actor just annoys me. Oh well, to each his own. :)

    Hummus Quesadilla?! What a brilliant idea!

    My husband has Season 1 of Monk. I have only seen a few shows, but I think it’s funny. I really like that actor. He’s very versatile.
