Christmas Pops Concert

What a busy Sunday! I’m happy to say that we have officially started our Christmas shopping! We definitely don’t have much done yet, but we started and that’s more than what we had done before! In between all of our Christmas errands we took a break to see a free holiday concert put on by the Gainesville Pops. (I love free! Plus it was located in the church where my office is located, so it was easy to navigate). The concert was pretty good! I originally was going to say that the concert was decent, but I’ve seen a ton of high-caliber groups (I’ve even performed in a piece with the London Symphony Orchestra once!) and I can’t compare the group to them. For a volunteer, non-profit, amateur/ professional group, they were pretty good!

DSC_3846 The group is by “invite only”. I kind of want to email my music/ flute resume and say that I’m open to an invite. Is that tacky? ;)

Once we got back the dinner I had planned (a roasted vegetable and spinach pasta dish with a side salad) went right out the window. Neither of us were feeling it! So instead we took the 15-minute approach and made his and hers nachos. We layered a cake tin with foil and placed blue corn tortilla chips, salsa, spinach, black olives, black beans, mushrooms and our respective cheeses (vegan cheeze on mine, mozzarella on Ross’).

Just like last night, this is another really easy way to make a vegan and non-vegan version of one dish to please both parties. Plus – just like last night’s pizza – it goes to show that there is really nothing that you can’t make a vegan alternative of! (By the way – last night’s pizza was one of the best I’ve ever had!)

    Sounds like a fun free concert! :)

    We do His/Hers dinners almost every night and nachos are definitely one that frequents our menu. I love being able to customize your plate with the toppings of your choice and pizza and nachos make the perfect opportunity for this.
