I am happy to report that today was a much better day than yesterday! I wore a cute outfit to work, including my favorite heels as well as leggings – I am so late on the legging trend, today was my first time wearing them! Sometimes just putting on an outfit that you feel cute and confident in is enough to take your day around in a positive direction.
It’s the simplest things in life that can make a world of difference!
Lunch today utilized the last of some salad greens with some little croutons, dried berries and raspberry vinaigrette.
I also made an open-faced sandwich by taking french bread and layering hummus, tomato and vegan cheeze on top and popping it under the broiler for a few minutes. Loved it! The hummus does amazing things to toasted, doughy bread!

I waited for Ross to get home so we could go on a jog together. I love it when Ross goes with me! It’s so distracting, fun and the time flies by! My foot was still a little tender from when I twisted it yesterday, so we did thirty minutes of run 2 minutes, walk 1. (No worries on the foot – I started to go for a jog yesterday morning and in the process of dodging a van that started to back out before looking – there are no sidewalks in our apartment complex – I landed on it a little funny. All’s good though!)
Dinner was a cross between salad, roasted veggies, and pasta. I cooked some eggplant, mushrooms, garlic and black olives in a tiny bit of olive oil and a few generous splashes of red wine. Meanwhile, I boiled some organic spinach pasta I picked up from Whole Foods. I combined the pasta and some of the pasta water into the vegetables and voila! Delicious. In order to give a little more volume to my bowl (we have deep bowls!) I filled mine about 3/4 full of organic spinach, then topped with the roasted veggies and pasta. I also made some garlic bread that I toasted with olive oil, garlic powder, dried parsley and dried oregano.
So delicious! I love my veggies, but honestly I have been feeling the carbs lately and could have eaten an entire loaf of garlic bread! I think it’s a hormonal thing.
Regardless, I’m glad I stuck to my veggies!
Random question – what favorite dish do you have that you would like to see a vegan version of? I fully believe that every recipe has an equally delicious vegan counterpart. If you have any recipes you’re not sure how to veganize, please share! I’m always looking for meal inspiration, and who knows – maybe my next inspiration could come from your family’s favorite comfort meal!

i am dying for a vegan ruben or vegan crab cake…so much tha im seriously about to cave in and eat the real things. haha that wouldn’t terrible, but Id love to see vegan versions of typical “unhealthy” foods like those!

and i love that you had a better day, and the cute outfit helped! when i feel down i go and try on crazy expensive and colorful dresses at the mall to boost my self esteem. it’s way fun!
You beat me with the leggings … I have yet to know how to wear them, but I always think they’re so cute! I agree though, a cute outfit that makes you feel good can do wonders for your confidence : )

I love it that Ross runs with you! My husband and I run together too, and I feel like it is such a great way to bond.

I love making vegetarian/ vegan versions of Cincinnati Chili. Instead of being spicy, it is rich and kind of sweet!
I am actually going to try making vegan cookies for a cookie exchange this year. I am going to use your blog as a guide obviously!
