I’m about to breeze through this post because I’m exhausted! Lunch was snacky – a small sweet potato baked as fries with chili powder, cinnamon, garlic powder and kosher salt.
I also had some baby carrots and half a cucumber:
That I dipped in some muy delicioso garlic hummus!!! Creamy Sabra’s!

Work breezed by! Busy! While there I snacked on some peanut butter-filled pretzels. I think the only vegan option. The dinner options for the girls were kind of scary. Ham someone brought in as well as those pasta dishes from Pizza Hut. Obviously not a single dinner-related thing I could have! That’s ok though, I had a killer soup waiting at home!
I used the last of my 7 bean and barley soup mix I got from a Whole Foods bulk bin (must get more of this!) that I threw in the crockpot with salsa, leftover blacked beans in the fridge, vegan bouillon, water, rosemary, garlic powder, chili powder, cumin and oregano. The flavors were so delicious and warming!
Combine the soup with a doughy, fresh out of the oven roll (or two) and you have the perfect dinner for a chilly night! (Yeah, remember when it was in the 80s and hot and humid yesterday? Tonight it will be in the 30’s…um Florida? bipolar much?)
More frugal holiday posts to come tomorrow! For now, I really want to go to bed. At 10:00. And to think back in college midnight was an early bedtime, and 10:00 really isn’t early at all right now. I feel like my age is regressing back to when I was a wee lil’ kid and 10:00 was staying up late and way past my bedtime.

Those baked sweet potato fries look yum. I also am a huge fan of hummus. I have made a hummus pizza with cucumbers before with La Tortilla Factory tortillas.
Florida almost sounds as bipolar as Southern California!
