Three cheers for the weekend! Ross and I went to bed with lofty goals of getting up to go for a run together then head out to tackle some Christmas shopping and other errands. The rain quickly put a damper on that! Ross has been feeling like he’s fighting off a cold, so the last thing we wanted to do was stumble out of our warm cocoon of a bed and head out for a cold and wet run. Unfortunately it’s still raining, so I think we’re just going to postpone it until later.

Breakfast this morning was an old favorite that I found on sale yesterday – Ezekiel Cinnamon Raisin bread. I love this bread, both the nutritional quality and the taste, so when I found it on sale for $2 off it’s normal price, I was all over it!

I had two slices, toasted, with pumpkin butter, along with half a banana with honey almond butter.

I just realized this is our last weekend home before Christmas! AKA – I need to bake cookies this weekend! Priorities, right? ;) What’s your favorite Christmas cookie? I love decorating sugar cookies, but I’m particular about how they taste. My mom always made seven-layer bars over the holidays, and I loved those. To me, a cookie is not a cookie unless it has chocolate. Any chocolate Christmas cookies out there I don’t know about?

    My mom used to customize a chocolate chip oatmeal cookie recipe into a chocolate cookie with pb chips. Soooo good. Just add some cocoa powder to the batter. Then make sure to slightly undercook them so they’re nice and chewy. I’ve made a vegan version of the batter before but I’m not sure if the pb chips are vegan….

    I love sugar cookies too! I have a great vegan recipe. I wonder if you would like them. I made some awhile ago and put them in the freezer. We pulled them out the other day and I ate one last night… I was surprised at how good they are! (after being in the freezer – I have never frozen cookies before)

    I had the same bread for breakfast! I top it with coconut oil and more cinnamon. Mmmm….

    I love those checkerboard cookies. with chocolate and sugar cookie dough. But they are so tedious to make!

    I love decorating sugar cookies, too. But I really like eating chewy gingerbread cookies :)

    I love making and eating Christmas sugar cookies, so many memories of those…but love gingerbread man too!
